Our Zippy Bell Pepper Deviled Eggs
On our last holiday weekend, Mike and I decided to have a Test Kitchen for Deviled Eggs. A Test Kitchen Day is where we try out new recipes and ideas we have, force our family taste them, and grade them 1-5 stars. I’m so glad we did this because it resulted in our new favorite Deviled Egg combo!
Deviled eggs are the perfect thing to bring for potluck or BBQ, but why keep with just the traditional flavors. This recipe was inspired by a red bell pepper we had just sitting in the fridge. In trying to come up with different deviled egg ideas, I had this thought of grating some red bell pepper to use as a topper. Mike grabbed on to that idea and came up with this yummy number.

Ingredients, Substitutions, and Additions
Hard Boiled Eggs: There are so many ways to make hard boiled eggs these days. Our favorite way is in the Instant Pot with the 5/5/5 method. With this method you pressure cook them for 5 minutes, allow the steam to naturally release for 5 minutes, and put them in an ice bath for 5 minutes. I’ve always had luck with this method and the yolk is perfectly cooked every time.
Mustard: We like to experiment with our mustards and have tried a bunch of different varieties. For this recipe we went with a Chardonnay Dijon Mustard but you really could use anything you like.

Ingredients for Zippy Bell Pepper Deviled Eggs
- 2 Hard Boiled Eggs
- 1 tbs Mayonnaise
- 2 tsp Red Bell Pepper, Diced
- 1/4 tsp Fresh Dill
- 1/2 tsp Shallots, grated
- 1 tsp Chardonnay Dijon Mustard
- 1 tsp Pickle Juice
- Shredded Parmesan Cheese, topping
- Bacon Bits, topping
Directions
Cut the hard boiled eggs in half and place the yolks in a small bowl. Add mayonnaise, Red Bell Pepper, a pinch of fresh dill, shallots, mustard, and pickle juice to the bowl and mix.
Add the mixture into a snack size resealable bag and cut off the corner.
Pipe the mixture evenly into each half of the hard boiled egg.
Top with shredded parmesan cheese and bacon bits. Enjoy!
