Our Easy Tropical Fruit Salad

With just three ingredients this quick and Easy Tropical Fruit Salad is perfect for any time of day or occasion. Like many recipes, this fruit salad combo came to be due to the fruits I had on hand that needed to be eaten before they went bad. Little did I know this combo would be my absolute favorite snack to bring to work.

Ingredients, Substitutions, and Additions

Mango – I’ve seen many ways of cutting up a mango and for the longest time I would just make a mess of everything. Because mangos are so tasty I kept at it and tried many ways of dicing these up. The easiest way I have found to cut up a mango is as follows:

  • Lay the mango on a cutting board and rotate so the narrowest side is resting on the cutting board.
  • Estimating where the seed is, slice the front of the mango off. Rotate and slice the back of the mango. You will now have the two pieces we cut away and a disk like piece where the seed is.
  • To get the most out of the mango, lay the seed flat on the cutting board and slice the sides where the peel remains. Try to get as close to the seed as possible .
  • Take the pieces you just sliced and lay them on the cutting board peel side down. With a knife, carefully, slice away the peel. Dice the remaining fruit into bitesize pieces.
  • With the first two pieces we cut, take a knife and cut a checkered pattern into the fruit while making sure not to cut through the peel.  Use the edge of a spoon to scoop the fruit away from the peel leaving you with diced mango.
 
Kiwi – Cut the peel away from your ripe kiwis and dice into bitesize pieces.
 
Bananas – These too should be peeled and diced. You don’t want your bananas to be too ripe as the texture is not satisfying. If you are making this recipe the night before you plan on eating it, add the banana in the morning of, so it does not turn brown and mushy.

Fried Eggs – The perfect fried egg is cooked on both sides with a velvety yolk. This is our foolproof way of making the perfect fried egg, yolk intact.

Fried Breakfast Potatoes – Need an addition to your breakfast rotation. These Fried Breakfast Potatoes are crispy outside, soft inside, and seasoned to perfection.

Everything Bagel Avocado Toast – Everything Bagel Avocado Toast is a great option for breaking up the monotony of cereal or eggs in the morning.

Ingredients

  • 1 Mango, diced
  • 2 Kiwis, diced
  • 1 Banana, diced

Directions

Cut all the fruit into bite sized pieces and toss into a bowl.
Stir and serve.

*Note* – This recipe is best eaten the day it’s made, as the bananas do not keep well. If you are wanting to make the fruit salad ahead of time, do not add the bananas in until just before you are ready to eat.
