Potatoes are a hot topic in our family. Baked potatoes, mashed potatoes, fried potatoes…we love them all! But we are also very picky about them. In particular fried potatoes are something that must be perfect, they must be crunchy on the outside, soft on the inside, and seasoned to perfection. Minda and her father, are extra picky about their fried potatoes as they love them darn near burned. However, after too many times to count, these fried breakfast potatoes made the cut by the whole families standards. 

The trick to crispy potatoes is water. Potatoes can take a long time to cook all they way through and can burn easily if you are looking for a crispy layer on the outside. Adding water periodically steams the potatoes from the inside out, cooking them faster and giving just enough time for a crisp outside. Give these Fried Breakfast Potatoes a try and see how you like them. 

Ingredients, Substitutions, and Additions

Suggestions – The potatoes are finished when there is a crunchy exterior and a velvety center. If a cruncher potato is desired cook an additional 5 to 10 minutes.

Fresh Veggies – Add some diced onion, bell pepper, and garlic to give your potatoes extra flavor. If you enjoy spicy add a jalapeño or serrano.

Toppings and Pairings – Enjoy these fried breakfast potatoes with a fried egg or top with your favorite hot sauce. They go great with some bacon and scrambled eggs in a tortilla as a breakfast burrito.

Ingredients for Fried Breakfast Potatoes

  • 2 Russet Potatoes
  • 1/2 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Thyme
  • 2 tbs Oil
  • 5 tbs Water

Directions

Wash and peel the potatoes. Cut potatoes into 1/8 inch cubes and place in a mixing bowl. Add dry seasoning and oil to the bowl and mix to evenly coat the potatoes.

Bring a large pan up to medium high heat. Add the potatoes to the hot pan along with 3 tbs water. Cover and cook for 5 minutes. Remove lid and stir.

Add an additional 2 tbs water. Cover and cook for 10 minutes. At the five minute mark stir to prevent burning. Remove potatoes from heat. Plate and enjoy.
