Our Tomato and Cucumber Salad

Try our refreshing tomato and cucumber salad, it’s perfect for a potluck or the midday munchies. 

Our recipe was inspired by my mom. While growing up I can remember having a garden with many different veggies. One of my favorites were grape tomatoes. Mom would always chop them up with some cucumbers, salt, and pepper and then like magic they were gone. 

Minda and I have transformed my mom’s tomatoes and cucumbers into a refreshing salad. If you need a quick and easy side or snack our tomato and cucumber salad is an amazing option. 

Ingredients, Substitutions, and Additions

Cucumbers – We mostly use English cucumbers. We also enjoy using garden and lemon cucumber.

Tomatoes – Cherry tomatoes are an amazing alternative to grape tomatoes. No grape or cherry tomatoes on hand? No worries! Any tomato will do, you just want to make sure to leave the majority of the seeds out.

Hint: The easiest way we have found to get rid of the seeds is to cut slices around the outside of the tomato. This will leave you with the seedy center that you can discard. Then, all you need to do is cut up the remaining slices into 1/2 inch pieces. 

Cheese – Cube up some of your favorite cheese in place of feta.

Dry Seasonings – For some spice try and add some red pepper flakes.

Fresh Herbs – Some finely sliced basil adds an amazing flavor.

Toppings – Some soy sauce paired with sriracha is tasty.

Tomato & Cucumber Salad

Ingredients for Tomato and Cucumber Salad

  • 2 Large Cucumbers
  • 1 cup Grape Tomatoes
  • ½ Red Onion
  • ½ cup Feta Cheese
  • 1 tsp Pepper
  • ½ tsp Salt
  • Balsamic Glaze

Directions

Wash and dry the cucumbers and grape tomatoes. Chop the ends off the cucumbers and then quarter them. Now cut the quartered cucumbers into thin 1/8th inch slices and place them in a large mixing bowl.

cut the grape tomatoes in half and add them into the mixing bowl.

Chop the red onion into 1/8th inch slices then cut the slices in half.

Add the chopped red onion, feta cheese, salt, and pepper into the bowl of cucumber. Stir to fully incorporate all ingredients. Plate, then drizzle on the balsamic glaze and enjoy.

Ingredients

  • 2 Large Cucumbers

  • 1 cup Grape Tomatoes

  • ½ Red Onion

  • ½ cup Feta Cheese

  • 1 tsp Pepper

  • ½ tsp Salt

  • Balsamic Glaze

Directions

  • Wash and dry cucumbers and grape tomatoes.
  • Chop off ends of cucumbers then quarter. Slice into 1/8th inch slices and put into large mixing bowl.
  • Slice grape tomatoes in half and add to the cucumbers.
  • Chop red onion into 1/8th inch slices then half. Add red onion, feta cheese, salt, and pepper to the cucumbers and tomatoes. Mix to fully incorporating all ingredients.
  • Plate and drizzle with balsamic glaze. Enjoy!
