Our Tomatoes and Cheese with Balsamic Glaze

Growing up in a big family where parties, graduations, and family reunions felt like every weekend there was a need for snacks and appetizers. I can remember helping slice the tomatoes and cheese for my family grab and go trays. As Minda and I started our own family, we needed to start bringing goodies to our family functions. I wanted to put a spin on the tomatoes and cheese I remember as a child. That’s how I came up with my version of Tomatoes and Cheese with Balsamic Glaze.

Ingredients, Substitutions, and Additions

Cheese – Any type of block cheese will do. Switch it up. Different types of cheese can give you a variety of flavors. Try a sharp white cheddar, the intense bite pairs great with the sweetness of the balsamic reduction. A smoked Gouda or creamy Havarti taste great with the acidity of the tomatoes. 

Fresh Veggies and Herbs – Try some fresh basil in between the cheese and tomatoes, it pairs perfectly. Sweet bell pepper or English cucumber are wonderful additions too. 

Balsamic Reduction/Glaze – This can be found in any grocery store. Usually down the aisle with vinegar. Sometimes the grocery store will have a balsamic reduction with raspberry or orange.

Toppings – When utilizing a topping add them after drizzling the balsamic reduction it allows the toppings to stick better. Try finely chopped chives on top. It adds great flavor. Add some crushed red peppers. The little bit of heat pairs great with the acidity of the tomatoes and tangy sweetness of the balsamic reduction. Dried minced onion and garlic also add a little zip.

Ingredients for Tomatoes and Cheese with Balsamic Glaze

  • 16 oz Grape Tomatoes
  • 8 oz block Colby Jack Cheese
  • 8 oz block Pepper Jack cheese
  • Balsamic Reduction
  • Toothpicks

Directions

Rinse and dry the grape tomatoes. Slice grape tomatoes in half in a diagonal direction. Cut Colby Jack and Pepper Jack into ¼-inch cubes.

Take the toothpick and slide a ½ piece of grape tomato on, add a piece of cheese, and finish with the opposite half of the grape tomato. Plate the skewered tomato and cheese onto a serving plate. Continue the process until the tomatoes and cheese are gone. Drizzle the skewers with a balsamic reduction and enjoy.

Rinse and dry grape tomatoes. Slice them in half in a diagonal direction.
Cut cheeses into ¼-inch cubes.
Using a toothpick slide ½ grape tomato on, add a piece of cheese and finish skewer with the opposite half of the grape tomato.

Plate skewered tomato and cheese. Continue the process until the tomatoes and cheese are gone.

Drizzle skewers with balsamic reduction and enjoy
