Our Lemon Pepper Chicken Salad Wraps
Did anyone else grow up with that chicken salad that had chunks of grapes in it? It seemed to me like anytime I went to a potluck or ordered a chicken salad sandwich from a restaurant, they always had grapes in it. Why? It was just weird. I guess I didn’t like the texture or the sweetness the grapes brought to the recipe. But there is good news. We are adults now, and we don’t have to put grapes in our chicken salad. Please let me introduce you to our Lemon Pepper Chicken Salad Wraps.
In our twenties, Mike and I needed new things on our lunch rotation. We just got tired of the same old lunches every day. So one day, we decided to make chicken salad. Not just any old chicken salad. We wanted Lemon Pepper Chicken Salad. Now, lemon pepper was a rare thing we could have in our house. Our child loved lemon pepper chicken. When I say loved, I mean LOVED lemon pepper chicken. To the point where he would steal the lemon pepper seasoning and we would find it hidden in his room. Armed with an unopened lemon pepper seasoning, we came up with these Lemon Pepper Chicken Salad Wraps that are a little tangy with a hint of spice.

Ingredients, Substitutions, and Additions
Mustard – We used just a regular Yellow Mustard for this recipe. However, a Garlic Aioli would add a lot of flavor. While a Dijon with Chardonnay would give it a little bit more of a kick in the spice level.
Flour Wrap Tortillas – We used two different wraps for our pictures. The spinach and the Tomato Basil wraps both complimented the Lemon Pepper Chicken Salad.
Fresh Squeezed Lemon – If a little more tanginess is desired add the juice from half a Lemon when combining the Celery, Onion, Pickle, Mayonnaise, Mustard, and Lemon Pepper Seasoning.

Ingredients
Lemon Pepper Chicken
- 1 lb Chicken Tenders
- 1 tbs Garlic, powder
- 1 tbs Onion, powder
- 3 tbs Lemon Pepper Seasoning
- 2 tbs Oil
Lemon Pepper Chicken Salad Wraps
- 3 Celery Stalks, diced
- 1/2 Medium Onion, diced
- 1 Whole Pickle, diced
- 5 tbs Mayonnaise
- 1 tbs Yellow Mustard
- 1 tsp Lemon Pepper Seasoning
- 6 Flour Wrap Tortillas
- 1 cup Shredded Lettuce
- 1 Tomato, sliced
Ingredients
How to Make Lemon Pepper Chicken
Season both sides of the Chicken Tenders with dry seasonings.
Bring a large pan to medium heat and add oil to the hot pan. Lay seasoned Chicken Tenders in the pan and cover. Allow the chicken to cook 10-12 minutes, flipping every 2-3 minutes to prevent the seasoning from burning. Chicken is fully cooked when it reaches 165°.
Pull the chicken from the pan and allow chicken to cool to room temperature. Once chicken is cooled, dice to 1/4 inch pieces and set aside.
Lemon Pepper Chicken Salad Wrap Assembly
In a medium bowl add Celery, Onion, Pickle, Mayonnaise, Mustard, and Lemon Pepper Seasoning. Stir until completely combined.
Lay one Tortilla on a flat surface. Place 3/4 cup Lemon Pepper Chicken Salad in the center of the tortilla. Place Tomato and Lettuce on top of the Chicken Salad. Fold in left and right sides of the tortilla and roll like a burrito. Assemble remaining wraps with chicken salad, lettuce, tomato. Serve and Enjoy!
