Our Chocolate Chip Mini Pumpkin Loaves

Have you ever seen something and thought, “There is no way that is good.” Only to try it and it be the best dang thing you have eaten in years? Well, it happened to me. Never in my wildest dreams did I think I would like the combination of Chocolate Chips and Pumpkin. But I LOVE it! 

After making these  Chocolate Chip Mini Pumpkin Loaves for my family they became an instant hit. Mike and our son love these for breakfast and to take with them to work/school to snack on. This recipe can easily be made into mini muffins for an easy grab and go meal. Best part of all is they freeze well for future use.  

Ingredients, Substitutions, and Additions

Pumpkin – One 15 oz can of Pumpkin Purée is all we need for our mini loaves. 

Orange Juice – We need a little liquid in our bread to keep it moist and OJ adds a little bit of tang that pairs perfectly with the pumpkin and chocolate. 

Chocolate Chips – You would think, when working with “mini loaves” that you would want mini chocolate chips. Nope, we want regular Semi-Sweet Chocolate Chips. And load it up with an entire bag. No skimping on the chocolate in these pumpkin loaves. 

Butter – In this recipe we are going to use softened butter. If you’re like me, you may have forgotten to let your butter rest at room temperature in preparation for your bake. No worries, just preheat your oven and set your sticks of butter next to the oven for a couple minutes. It will be soft in no time. 

Loaf Pan – I fell in love with a mini loaf pan I found awhile back which bakes 6 – 2″x3″ mini loaves. However, you could easily use a muffin tin, mini muffin tin, or bread tin.

Chocolate Chip Mini Pumpkin Loaves

Ingredients for Chocolate Chip Mini Pumpkin Loaves

  • 15 oz can Pumpkin Purée
  • 2/3 cup Orange Juice
  • 4 Eggs
  • 2 sticks Unsalted Butter, softened + 2 tbs for loaf pan
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 3 1/2 cups Flour + 1/2 cup  for loaf pan
  • 1 tsp Salt
  • 2 tsp Baking Soda
  • 1 tsp Ground Ginger
  • 1 tbs Ground Cinnamon
  • 1/2 tbs Ground Nutmeg
  • 12 oz bag Semi-Sweet Chocolate Chips

Directions

Preheat oven to 350°.

Prepare loaf pans by spreading a thin coat of butter around each loaf and dust with flour. 

Beat Butter, Sugar, and Brown Sugar on medium until smooth.

Mix in Pumpkin, Orange Juice, and Eggs until completely combined. 

In a separate bowl, combine Flour, Salt, Baking Soda, and Spices. 

On low speed, slowly add in the Flour Mixture into the Pumpkin Mixture. Mix until completely incorporated. 

Fold in Chocolate Chips. 

Fill loaf pans leafing about a 1/4″ space from the top to allow the loaves to rise. Bake for 30 minutes* or until edges turn a light brown. Makes 14 mini loaves. 

Remove from oven and cool on a wire rack. Serve and enjoy!

*Note – Cooking time will vary depending on size of loaf or muffin tin.*
