Chocolate Pecan Powerballs

Our No Bake Chocolate Pecan Power Balls

We love our protein packed No Bake Chocolate Pecan Power Ball treats because they are sweet, chocolaty, and nutty all in one bite. We enjoy them for a quick breakfast bite on the go or as a pick me up snack during the day.  One thing we hate doing is dishes and our No Bake Chocolate Pecan Power Balls come together in one large bowl for easy clean up.

There are a lot of recipes out there for power balls. But what sets these apart are the fact that they are not made with peanut butter. Peanut butter is too strong of a flavor for Minda. So we tried some alternative nut butters and our favorite was Pecan Butter.

The best part of this recipe is you literally add the ingredients to a bowl and mix them up. The hardest thing to do is rolling the mixture into balls. But, as long as you’re not afraid to get your hands a little dirty, all will be fine.

Ingredients, Substitutions, and Additions

Nut Butter – Try any type of nut butter you like. We enjoy Almond, Peanut and Walnut butter. Sometimes we even do combos. My favorite is an Almond and Pecan mixture.

Chocolate Chips – Try using mini chocolate chips or chocolate chunks. Maybe do a mixture of both.

Dried Fruit – Dried fruit can add additional sweetness. Dried cherries and raisins are amazing additions.

Healthy additions – Flaxseed, Chia seeds and Hemp seeds can help add additional nutrients.

Toppings – Try some chocolate melting wafers to coat your Power balls. You can fully coat or drizzle.

Preferred Pairings

Our No Bake Chocolate Pecan Power Balls are the perfect solo snack. However, Minda and I often took a bento box packed full with snack items to lunch. Here are some ideas for a bento box.

Tomatoes & Cheese with Balsamic Glaze – If you are looking for something quick and easy to bring to your next potluck, our Tomatoes and Cheese with Balsamic Glaze are perfect!

Deviled Eggs – One of our favorite potluck or holiday appetizers are deviled eggs. They don’t take a lot of effort, you can make a bunch all at once, and they are just yummy!

  • 1/2 Cup Pecans, chopped
  • 1/2 Coconut
  • 1/4 Cup Honey
  • 1 tsp Vanilla
  • 10 oz Pecan Butter

In a separate bowl, stir together honey, vanilla and pecan butter.  Pour wet ingredients into the large bowl and mix thoroughly with your hands to make sure everything is combined.

Now to the fun part, making our power balls. Using your palms roll the mixture into 1in to 1-1/2in balls.

Store your power balls in an airtight container in your refrigerator. These treats stay good for 10 days, but always seem to disappear within 4 to 5 days.
