Our Veggie Omelet
It wasn’t until recently that I started to enjoy the idea of an omelet. Since childhood, eggs have been one of two ways. Scrambled with cheese or wrapped in a tortilla (I’m convinced a tortilla can make anything taste good). Anything else was just too much egg and I wasn’t a fan.
On a trip to Tahoe, we visited an all you can eat buffet that included an omelet station actually looked appetizing. Since that day I’ve made it my mission to perfect this breakfast classic.
Ingredients, Substitutions, and Additions
Eggs – Most restaurants I’ve been to serve a three egg omelet. This recipe calls for just one based on our preferences. However, there is no harm in adding an additional egg or two. I will say that it does make it a little harder to flip though so make sure you have a nice large spatula on hand.
Veggies – There are endless amount of veggies you could substitute based on your preferences or what’s in the refrigerator. Some options are, broccoli (cut up real small), asparagus, and olives. Do keep in mind the amount of veggies you add. Too much more than what is listed in the recipe makes the omelette extremely hard to flip.
Spice – If you like a little spice in your eggs add a little hot sauce in the middle of the omelet just before you fold it in half.
Preferred Pairings
Our Veggie Omelet is perfect just on it’s own. However, there are some extras that go perfectly.

Veggie Omelet Ingredients
- 1 Egg
- 2 tbs Fresh Spinach, roughly chopped
- 1 tbs Onion, diced
- 1 tbs Red Bell Pepper, diced
- 1 tbs Tomato, diced
- 1 tbs Zucchini, diced
- 1 tbs Feta Cheese
- 2 tbs Colby Jack, shredded
- 1 tbs Olive Oil
Directions
Whisk one egg and set aside.
Heat small pan to medium and add olive oil. Add chopped onion and bell pepper to the pan and sauté for 3-4 minutes until just tender. Mix in tomato and zucchini and sauté for an additional 2 minutes. Sprinkle chopped spinach in pan and decrease heat to low.
Pour whisked egg into the pan tilting from side to side to ensure the egg covers the bottom of the pan and all ingredients. Cover pan and let cook for 2-3 minutes or until you can see the top of the egg start to harden and the sides of the egg pull slightly away from the pan.
Using a spatula flip the omelet to allow the egg to cook completely on the other side. On one half of the omelet, sprinkle half the feta and colby jack cheese. Fold the omelet in half and sprinkle remaining cheeses on top. Turn heat off and cover pan to allow cheese to melt.
Serve and enjoy!

1 Egg

- Once the top of the egg starts to harden and the sides of the egg pull away from the pan, flip omelette.
- Sprinkle half the feta and colby jack cheeses on one side of the omelet.
- Fold omelet in half and sprinkle remaining cheese on top. Turn off heat and cover pan to allow cheese to melt.
- Serve and enjoy!
