Deviled eggs are the perfect thing to bring for potluck or BBQ, but why keep with just the traditional flavors. Today in our Test Kitchen – Deviled Eggs; Part 1 we tried different flavor combinations to come up with our new favorite.

One of our favorite potluck or holiday appetizers are deviled eggs. They don’t take a lot of effort, you can make a bunch all at once, and they are just yummy!

Until recently, Mike and I always made the same kind of deviled egg which was fairly traditional as far as flavor. But why not try some non traditional deviled egg variations? After giving it some thought we came up with about 20 different ideas and with each one we became more and more excited about the different possibilities.

Because of all our many ideas, we had to decide on just five deviled egg recipes that we could taste test. The rest of our ideas would have to wait for a later date.

To have a baseline to compare our new deviled egg ideas to we made our traditional recipe that we knew was going to be yummy. This recipe included: Egg Yolk, Mayo, Pickle Juice, Spicy Brown Mustard, Fresh Dill, Diced Pickles, Paprika, Green Onion, and Bacon Bits.

Feedback:

  • Good flavor!
  • Very Tangy!
  • Needs more diced pickles for texture.

This idea come from our recent post, Everything Bagel Avocado Toast. It’s one of our favorite breakfasts and was a logical step for us to try it in a deviled egg form. I think we all had really high hopes for this one but it kind of fell flat for us. This recipe included: Egg Yolk, Mayo, Avocado, Salt, Garlic Whole Grain Mustard, Grape Tomatoes, Shallots, and Everything Bagel Seasoning.

Feedback:

  • Nice creamy texture. I like the avocado flavor.
  • I’m a little bummed. I wanted this one to be better.
  • Needs more salt. It’s too bland.

Mike has been on a Balsamic Glaze kick recently and has put it on almost everything. His favorite snack these days is tomatoes and Balsamic Glaze and he really wanted to try this combo on a deviled egg. The results were good but need some fine tuning for it to be perfect. This recipe included: Egg Yolk, Mayo, Dejon Mustard, Pickle Juice, Fresh Dill, Salt, Pepper, Shallots, Grape Tomato, Feta, Balsamic Glaze, and Basil.

Feedback:

  • Needs more salt and glaze.
  • Delicious!
  • Balsamic glaze mixed in rather than just on top would help with the flavor.
Wasabi Deviled Egg

Knowing we wanted to have a deviled egg with some spice to it Mike and I were looking for another combination that was more unusual. Our son loves sushi and always on the lookout for really good wasabi that will make him breath fire. So this is our Japanese inspired Wasabi Deviled Egg. Again we had really high hopes for this one and with a little tweaking it has the potential to be our new favorite. This recipe included: Egg Yolk, Mayo, Soy, Wasabi, Cream Cheese, Avocado, Siracha, Black Sesame Seeds, and French Fried Onions.

Feedback:

  • I can only taste the wasabi.
  • Needs something else to improve the flavor.
  • Love the French Fried Onions. Needs more!
Zippy Bell Pepper Deviled Eggs

Zippy Bell Pepper Deviled Egg

This recipe was inspired by a red bell pepper we had just sitting in the fridge. In trying to come up with different deviled egg ideas, I had this thought of grating some red bell pepper to use as a topper. Mike grabbed on to that idea and came up with this yummy number. This recipe included: Egg Yolk, Mayo, Pickle Juice, Chardonnay Dijon Mustard, Shallots, Fresh Dill, Red Bell Pepper, Shredded Parmesan Cheese, and Bacon Bitts.

Feedback:

  • Delicious. Lots of flavor!
  • Nice balance of flavor!
  • Really good! Just needs smaller parmesan topping and it would be perfect.
