Our Roasted Brussels Sprouts with Feta

I love Brussels sprouts. They are great with any meal. I have made them so many times that everyone in the family loves them, even our son. Brussels sprouts are a great veggie that can be spruced up with seasonings. By adding flavors, you enjoy you can take Brussels sprouts from good to great. Minda has been asking me to make Brussels sprouts but requested that I don’t go crazy with seasonings or toppings. I tried to tone it down but couldn’t resist adding a little something extra. Now we have these delicious Roasted Brussels Sprouts with Feta.

Ingredients, Substitutions, and Additions

Brussels Sprouts – Minda, our son, and I can eat a whole 2-pound bag of Brussels Sprouts. We get them from our local wholesale warehouse for around 5 dollars for 2 pounds. They make for a cheap and easy side dish.

Dry Seasonings – I went super easy this time with just salt, pepper, granulated onion and garlic. When “going crazy with seasonings”, as Minda says, I like using a combo of chili powder, cumin, paprika, onion, garlic, rosemary, oregano, thyme, sage, or basil. I pick what would work perfect with the main course.

Cheese – Feta was all that we had on hand when I made our Roasted Brussels Sprouts with Feta and they turned out amazing. Normally I use what we call “Fancy Cheese” a mixture of shaved Asiago, Parmesan, and Romano. Cheese makes everything better so use what you love.

Ingredients for Roasted Brussels Sprouts with Feta

  •  2 lb Brussels Sprouts 
  • 1/4 cup Feta Cheese
  • 1 tsp Granulated Onion
  • 1 tsp Granulated Garlic 
  • 1 tsp Salt
  • 1/4 tsp Pepper 
  • 1 tbs Olive Oil
  • Non-Stick Cooking Spray 

Directions

Ingredients for Roasted Brussels Sprouts with Feta

Prep and coat Brussels Sprouts with seasonings: Preheat oven to 350°. Wash and dry Brussels sprouts. Cut root end off then slice in half. Line Cookie sheet with aluminum foil and spray with non-stick spray. Evenly spread Brussels sprouts onto cookie sheet. Drizzle Olive Oil (1 tablespoon) and sprinkle dry seasonings (1 teaspoon granulated onion, 1 teaspoon granulated garlic, 1 teaspoon salt, 1 teaspoon pepper) coating Brussels sprouts.

Add Feta to Roasted Brussels Sprouts

Roast, Top with Feta, Serve and Enjoy: Place into preheated oven and roast 15 minutes. Remove and top with Feta Cheese (1/4 cup). Return to oven and roast for an additional 15 minutes. Take roasted Brussels Sprouts out of oven and plate. Serve and Enjoy!
