Easter Bunny Cookies

Our Easter Bunny Cookies

As a kid, and maybe as an adult too, my favorite part about Easter was the sweets. It was a day of candy and chocolates…although I don’t remember any cookies on this day. So, when I became an adult and wanted to make something that would be fun and easy to share not just with family, but at gatherings or with coworkers. I went to the drawing board. I wanted something that tasted good but is also cute and super easy to make. So, I kept things simple with a modified sugar cookie recipe, some M&M’s and mini marshmallows.

Ingredients, Substitutions, and Additions

Cookie Dough – We are going for a modified sugar cookie type dough, so we keep to the basics of Softened Butter, Sugar, Vanilla Extract, Almond Extract, Eggs, Flour, and Baking Soda. 

M&M’s – Every kid wants cookies with M&M’s in them. It’s just a fact. So, we must add some to our dough. 

Mini Marshmallows – When shopping for this recipe, I originally wanted the colored mini marshmallows…but I can’t find them anywhere. Turns out this was for the best because I like the plain white ones better. Adding some marshmallows into the dough provides us with pockets of marshmallowie goodness. 

Toppings – The magic happens with the toppings. To keep things easy, I went with two simple designs. To prevent burning of the marshmallows and to make sure the M&M’s stay in the correct spot we must add them partway into the baking process and then return the cookies to the oven to continue baking. 

M&M’s: This is the easiest decoration by gently pressing in a couple M&M’s on top of the cookie.

Bunnies: Jazz up your Easter cookies by gently pressing in one mini marshmallow on top of the cookie. Next place two M&M’s on end on one side of the marshmallow to form bunny ears. Add additional M&M’s to the top if desired.

Ingredients for Easter Bunny Cookies

  •  3/4 Butter Softened
  • 1 cup Sugar
  • 1 tsp Vanilla Extract
  • 1/4 tsp Almond Extract
  • 2 Eggs
  • 2 cups Flour
  • 1 tsp Baking Soda
  • 1/2 cup M&M’S (plus extra for decorating tops)
  • 1/2 cup Mini Marshmallows (plus extra decorating tops)

Directions

Cream Sugar and Butter: In a large mixing bowl, cream together Sugar (1 cup) and butter (3/4 cup) on medium/high.

Add Vanilla and Almond Extract and one egg for Easter Bunny Cookies

Stir in Vanilla Extract, Almond Extract, and Eggs: Add Vanilla Extract (1 teaspoon), Almond Extract (1/4 teaspoon), and one egg. Mix on medium for about 30 seconds until combined and add one more egg. Mix until second egg is fully combined.

Combine Flour and Baking Soda and add to the butter mixture: In a separate bowl, mix together Flour (2 cups) and Baking Soda (1 teaspoon). With the mixer on low, add flour mixture to the butter mixture, about 1/4 cup at a time allowing the flour to be mixed in between scoops.

Add M&M’S and Marshmallows and refrigerate: Stir in M&M’S (1/2 cup) and Marshmallows (1/2 cup). Cover with plastic wrap and refrigerate for 1 hour.

Preheat oven and spoon cookie dough onto prepared cookie sheet: Preheat oven to 350° and prepare a cookie sheet with parchment paper or silicone liner. Scoop cookie dough into 1 inch balls and place 2 inches apart on the prepared cookie sheet. Bake 8 minutes and remove from oven.

Decorate and return to oven: Decorate cookies with marshmallows and M&M’S as desired and return to the oven for 2-3 minutes or until the bottoms of cookies just start to brown. Remove from oven and allow to cool for 3 minutes before transferring to a cooling rack. Serve and enjoy!
