Our Mixed Berry and Cheese Danish Bites

Did anyone else’s local grocery store get you hooked on those little bite sized Danish topped with cheese and various fruits only to one day NEVER sell them again? Well mine did. It wasn’t just me. My whole family loved them. So what do we do about it? We make our own at home. They are actually surprisingly easy to make with just some puff pastry (homemade or store bought) and whatever fillings you are craving. I was craving some cheese and love me some mixed berry so I went both. These Mixed Berry and Cheese Danish Bites are perfect for the whole family or share them with your friends and coworkers to your next gathering.

Ingredients, Substitutions, and Additions

Puff Pastry – You can buy puff pastry at your local grocery store, but if you have some time on your hands to allow it to chill, homemade is fairly simple. Once you have your puff pastry, it’s just a matter of rolling it out and cutting into squares. Fillings go directly on top of the pastry. No folding or fancy cutting necessary.

Cream Cheese Filling – Cream Cheese filling is a family favorite. Best of all, you just have to whip a couple things in the mixer and then throw it in the refrigerator until you are ready to use it. 

Note: The Cream Cheese Filling recipe below is enough for one full sheet of Puff Pastry. If making both Cheese and Mixed Berry Danish Bites use 2 sheets of puff pastry or cut the filling recipes in half.

Mixed Berries – I love fresh mixed berries but find it hard to keep them in the house for any length of time before they spoil. So we’ve enjoyed these Danish Bites with both fresh and frozen berries. Both options are detailed in the directions below. 

Note: The Mixed Berry Filling recipe below is enough for one full sheet of Puff Pastry. If making both Cheese and Mixed Berry Danish Bites use 2 sheets of puff pastry or cut the filling recipes in half.

Egg Wash – For a nice golden pastry, an egg wash is essential. This is probably the most tedious part of making these Danish Bites. Mostly because I’m a perfectionist and want them to look perfect. 

Tip: Use the back of a measuring spoon to get the egg wash as close as possible to the fillings.

Preferred Pairings for Mixed Berry and Cheese Danish Bites

Enjoy Mixed Berry and Cheese Danish Bites on their own or serve with a tasty breakfast of Ham and Veggie Frittata, Fried Breakfast Potatoes, and Everything Bagel Avocado Toast.

Ham and Veggie Frittata – Hosting Sunday brunch or just breakfast for the fam, this Ham and Veggie Frittata is sure to be a hit. Easy to make and full of flavor!

Everything Bagel Avocado Toast – Avocado toast is the perfect blend of crunchy and creamy. Throw it on some garlic bread and top with some everything bagel seasoning and oh, my goodness! It’s so good!

Ingredients for Mixed Berry and Cheese Danish Bites

  • 1 Puff Pastry sheet
  • 1 Egg

Ingredients for Cream Cheese Filling

  • 8 oz Cream Cheese
  • 1/3 cup Powdered Sugar
  • 2 tsp lemon juice
  • 1 Egg Yolk

Ingredients for Mixed Berry Filling

  • 16 oz Cream Cheese
  • 2/3 cup Sugar
  • 1/2 Lemon, juiced (approx. 2 tbs)
  • 2 cups Homemade Whipped Cream

Directions

Prep filling and refrigerate until ready to pipe onto Puff Pastry: Prepare Cream Cheese Filling and/or Mixed Berry Filling according to instructions below. Transfer fillings to piping bag and refrigerate until ready to pipe onto prepared Puff Pastry.

Cream Cheese Filling – Add all ingredients for Cream Cheese Filling into a mixing bowl. Mix at medium speed until smooth.

Mixed Berry Filling – Add Mixed Berries, Orange Juice, and Sugar into a medium sauce pan and bring to a simmer. Simmer for 10-15 minutes or until berries are soft, stirring occasionally. While berries are simmering mix together Corn Starch and Water in a small bowl to make a slurry. Once berries are soft, slowly add in half the slurry mixture and stir. Berry mixture will start to thicken. Add additional slurry if needed to achieve desired thickness. Remove from heat and strain into a bowl to remove seeds.
Note: Frozen berries can be more tart than fresh berries. We recommend you omit the OJ and add an additional tablespoon of sugar for a better flavor.

Prepare cookie sheet and roll out Puff Pastry to fit: Line 10×15 inch cookie sheet with foil and spray with non-stick cooking spray. Roll out puff pastry to fit inside the cookie sheet. Trim edges if needed.

Evenly divide pastry into squares: Use a knife or edge of a spatula to evenly divide pastry into squares approximately 2 inches by 1.5 inches.

Pipe filling onto pastry squares, brush with egg wash, and refrigerate: Pipe filling into a circle at the center of each square. Whisk an egg into a small bowl and bush exposed tops of the pastry squares while avoiding the filling in the center. Refrigerate pastries for 10 minutes.

Bake and enjoy: Preheat oven to 400° and bake pastries directly from the refrigerator for 20 minutes. Cool, serve, and enjoy!

Ingredients

  • 1 Puff Pastry sheet

  • 1 Egg

  • Cream Cheese Filling
  • 8 oz Cream Cheese

  • 1/3 cup Powdered Sugar
