BBQ Chicken Sandwiches
I’ve said it before and I will say it again, combine anything with bread or rice and it immediately becomes 100 times better! Shredded chicken on its own is tasty but to make a meal of it we need to do something with it.
Well, these BBQ Chicken Sandwiches are the perfect complement to our Shredded Crock-Pot Chicken. All we did was throw some of our meal prepped shredded chicken onto a tasty Brioche Bun. Add some BBQ Sauce and a bit of Coleslaw for some crunch.
These were SO GOOD and ridiculously easy to make. This would be the perfect meal for a busy weekday.

Fall off the Bone Crock-Pot Ribs
You know summer is nearing when you wear shorts instead of pants when you head outside. This also means barbeque time is among us. Mike has always been a fan of pork ribs. When we first moved in with each other, the apartment we lived in had a policy of no grills or barbeque pits.
That’s when he turned to the Crock-Pot. Using a Crock-Pot gave us the opportunity to have amazing fall off the bone ribs any time. The ability to throw some ribs in the slow cooker and have them ready with little effort makes our Fall off the Bone Crock-Pot Ribs perfect for any occasion.
Savory Beef Stew
I love Beef Stew, but when we were younger Minda would only eat the broth with some buttered bread. With so many ways to cook and combinations of veggies and herbs that can go into a Beef Stew I knew that I could make something Minda would love.
A Crock-Pot is the perfect way make Beef Stew and helped make my job easy. Our Savory Crock-Pot Beef Stew is a meal Minda and I Love and is always easy must have when you need a winner for dinner.
Shredded Beef Tacos
I LOVE TACOS! Anytime Mike asks me what I want for dinner, it’s more than likely going to be some type of Mexican Food. There is nothing easier to make than a taco. This time, Mike mixed it up by trying a Mexican inspired shredded beef right in the Crock-Pot. The Crock-Pot is quickly becoming one of our favorite ways to make meals this fall. Being able to throw our dinner on to cook in the morning and have it ready to go for dinner is such a blessing after a busy day. Check out these easy to make Shredded Beef Tacos. Crock-Pot Chili Verde Tacos
The first meal I ever cooked for Minda was tacos way back when we were just two kids in high school. Today, tacos are a go to meal in our house hold but since then we have stepped up our game a bit from the simple ground beef taco I made her way back when.
One of our favorite ways to make tacos is with our Crock-Pot Chili Verde Pork. This recipe is a true set it and forget it meal. It’s ideal for busy work days where you don’t want to come home and make dinner, potluck, or if you’re like us and decided to go for tacos one year for Thanksgiving rather than a typical turkey.
French Onion Pot Roast
Pot Roast is one of those recipes I grew up thinking was hard to make. I was wrong! We make this in our Crock-Pot. All you have to do is prep the meat, cut the veggies, throw everything into the Crock-Pot, and forget about it for the next 8 hours. I left Mike to his own devices and he put his Kick’n Kitchen twist on an amazing cold weather classic and he came up with French Onion Pot Roast.
It wasn’t until a friend of mine brought some pot roast from home that I started to really be a fan. Not because of the Pot Roast itself, but because the rice he had layered under his pot roast. Oh my goodness! It was genius! You see, there was a time where I didn’t care for pot roast. Mike would make pot roast for our son and himself, while I more than likely chowed down on leftovers. They LOVED it! After trying some on top of a bed of rice, I loved it too! Now it’s one of the meals I can’t wait to indulge in each year.
Shredded Beef Sandwich
I recently made Minda my French Onion Pot Roast and she asked if I could try and turn it into a sandwich. Challenge accepted. Being that I just made a roast I needed an idea for creating an amazing sandwich and I thought nothing beats a French dip. I wanted to make sure that it was going to be delicious and easy to make. Why not just use the Crock-Pot again? I decided to use the idea of a French dip as the inspiration for our Shredded Beef Sandwiches.
