Our Shredded Crock-Pot Chicken

One thing we love doing is making easy dinners for our busy week. There is nothing easier than our Shredded Crock-Pot Chicken, it is so versatile we use it to make several different meals. Sunday is always our meal prep day where we prep our lunches for the week and sometimes our dinners if we know it’s going to be a busy one. This Shredded Crock-Pot Chicken has been an awesome addition to our menu. By seasoning the chicken with just some basic ingredients it gives us the option to make multiple meals. We spice up our Shredded Crock-Pot Chicken and use it to make other meals such as tostadas, chicken sandwiches, creamy chicken rice bowls, and so much more. 

Ingredients, Substitutions, and Additions

Chicken Breast – To make sure we have enough food for several meals we use between four and five pounds of chicken breast. 

  • To help manage the amount of fat we trim off as much as possible before we throw it in our Crock-Pot. 
  • Cook your chicken on the low setting of your Crock-Pot, when cooked on high it can leave your chicken dry. 
  • Before refrigerating your chicken add some of the leftover broth to help keep it moist. 

 

Seasonings – Although we want to keep the base recipe simple, we don’t want to skimp on flavor. So we are going to add Onion Powder, Garlic Powder, Salt, Pepper, Paprika, Chili Powder, and Oregano. If you know that you’re going to be using your Shredded Crock-Pot Chicken for a specific meal adjust seasonings to help enhance flavor. 

 

Chicken Broth – Water is fine if you don’t have any chicken broth, but it helps add flavor. We like to have control of the salt we put in our meals so we try to find the Chicken Broth with the lowest amount of sodium or use our own homemade broth.

Shredded Crock-Pot Chicken

Ingredients for Shredded Crock-Pot Chicken

  • 4.5 lbs Boneless Skinless Chicken Breast
  • 2 cups Chicken Broth
  • 1 medium Onion, diced
  • 1 tbs Garlic, minced
  • 1 tbs Onion Powder
  • 1 tbs Garlic Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Chili Powder
  • 1 tbs Oregano

Directions

In a small mixing bowl combine Salt, Pepper, Paprika, Oregano, Onion Powder, Garlic Powder, and Chili Powder. 

Dice Onion and measure out Minced Garlic then place in Crock-Pot. 

Add two cups of chicken broth into Crock-Pot alongside combined seasonings and mix thoroughly. 

Trim any fat off the Boneless Skinless Chicken Breast and layer into the Crock-Pot. Cook on low for 3.5 to 4 hours or until  reach an internal temperature of 165°. 

Pull chicken out of Crock-Pot, shred then Enjoy.
