Our Grab-N-Go Breakfast Sandwiches
On a busy morning when Minda and I are running out of the house to get to work on time, the last thing on our minds is breakfast. Which is not good for us or anyone we come in contact with. There’s just something about that first meal of the day that immediately improves your mood. I decided I needed something that I could grab on those busy mornings. Enter these Grab-N-Go Sandwiches. Inspired by our favorite Egg McMuffins, these breakfast sandwiches can be prepared ahead of time and frozen individually so when you need one you just pop it in the oven or microwave.
Knowing I was going to make these breakfast sandwiches with Eggs, Sausage or Bacon, and an English Muffin, I needed some sort of sauce so they didn’t turn out dry. Not finding what I wanted at the store and realizing I might be the odd man out because I still like ketchup on my eggs every now and then, like when I was a kid, I set out to make my own. I made a ketchup style garlic aioli that works perfectly on our Bacon and Sausage Breakfast Sandwiches.
Ingredients, Substitutions, and Additions
Bacon and Sausage – I love using either bacon or sausage for our breakfast sandwiches. A pound of bacon or a package of breakfast sausage is all we need for our Grab-N-Go Breakfast Sandwiches. Minda and I love the thick style bacon. Minda doesn’t like sausage, but I do, and I prefer an original flavor breakfast sausage.
Eggs – I personally love an over medium egg but it is a little messy when trying to eat it in a sandwich. A fried egg with the yolk broken during the cooking process tastes awesome and reheats well. If you like scrambled eggs they hold up great on our Grab-N-Go Breakfast Sandwiches.
Cheese – Nothing beats cheese on eggs. I enjoy a thick slice of medium cheddar on my breakfast sandwich, but any cheese will do.
English Muffins – We love using English muffins for our breakfast sandwiches because they hold up perfectly when we make a large batch for meal prepping. With 6 English muffins to a package, it makes the perfect amount for a busy week.
Aioli Sauce – Use what you like. I make a ketchup style garlic aioli that is amazing. This sauce is great, and it also works for burgers and chicken sandwiches. Try and subsite the ketchup for mustard and put it on a turkey sub.
Meal Prep – We wrap our Breakfast Sandwiches in aluminum foil then place into a resealable bag. They stay good in the freezer for up to a month…but are usually gone within a week.
Preferred Pairings for Grab-N-Go Breakfast Sandwiches

Ingredients for Grab-N-Go Breakfast Sandwiches
- 6 Eggs
- 1 lb Bacon or 1 package Breakfast Sausage
- 6 English Muffins
- 6 Slices thick-cut Medium Cheddar Cheese
- Non-Stick Cooking Spray
Aioli Sauce Ingredients
- 1/2 cup Mayonnaise
- 2 tbs Ketchup
- 2 tbs Garlic, minced
- 1/2 Lemon, juiced
- 1/4 tsp Pepper
- 1/4 tsp Salt
Directions
Prepare Bacon or Sausage and toast English Muffins: Preheat oven to 350 degrees. Prepare bacon or sausage according to directions on packaging and place aside. Line a cookie sheet with aluminum foil and place split English muffins with the centers up into the oven for 5 minutes. Remove and let cool.
Fry Eggs: Bring a small pan up to temperature over medium/ high heat. Spray with non-stick cooking spray. Crack egg into pan and fry for 3 to 4 minutes breaking the yolk 2 minutes in. Flip and cook an additional 2 minutes. Place cooked egg on a plate and repeat until all eggs are cooked.
Make Aioli Sauce: Mix mayo, ketchup, minced garlic, lemon, salt, and pepper and then spread equally between tops and bottoms of English muffins.
Assemble breakfast sandwiches: Layer cheese, egg and meat on each English muffin. Wrap breakfast sandwiches in aluminum foil then place into a resealable bag.
Note: Typically, these Grab-N-Go Breakfast Sandwiches stay good in the freezer for up to a month…but are usually gone within a week.
Reheat breakfast sandwiches: When ready to eat sandwiches, remove them from the foil, wrap them0000 in a damp paper towel and microwave for 1 minute 30 seconds. Enjoy!
