Our Super Easy Coleslaw

One of Mike’s favorite sides is coleslaw. His favorite thing to do was head to KFC order some chicken for the family and get two sides of coleslaw just to make sure he would have extra to enjoy. Well, sometimes that can be pricey. So, after begging him to let me try making a homemade coleslaw, I set to work creating a similar version that was cheaper and easy to make that he could enjoy anytime. I hope you enjoy our Super Easy Coleslaw recipe just as much as Mike does.

Ingredients, Substitutions, Additions, and Tips

Tri-Colored Coleslaw Mix – We don’t have time to cut up all the ingredients, so grab yourself a bag of Tri-Colored Coleslaw Mix at the store. However, if you feel ambitious, all you need is to shred some Green and Red Cabbage and Carrots.

Onion – Shredded Onion gives the coleslaw just a bit of a kick.

Buttermilk Powder – We don’t have room to keep actual buttermilk in our fridge. If for some reason we do have it on hand, we can’t use it fast enough before it goes bad. What has saved us is Buttermilk Powder. Now we can use what we need and save the rest for future recipes. It’s great!

  • If you are using actual Buttermilk, simply substitute it for the Milk in the recipe and leave out the tablespoon of Buttermilk Powder.

White Vinegar – This is what is going to give your coleslaw that classic flavor. We know from experience, if you absolutely do not have white vinegar on hand, apple cider vinegar will work in a pinch. It tastes the same, but does make it smell a bit like apple cider vinegar. Maybe, if using this substitute, you keep it at home and don’t take it to your potluck or gathering.

Lemons – You need some acidity from lemons. No lemons? Limes work just as well.

Mayonnaise – This is going to bind everything together. Without mayo you are just going to have zippy cabbage and carrots.

Helpful Tip – For best flavor I like to make this coleslaw the night before or at least 2 hours in advance.
