Loaded Potato Salad

As we have said before, our family LOVES potatoes. That especially holds true when it comes to potato salad. Potato salad was a major favorite in my family growing up. However, I was the odd duck that just wasn’t a fan. My mom actually made me macaroni salad any time she made potato salad for the family just so I would have something to eat with our BBQ dinner. It wasn’t until I was in my twenties at a potluck one day that my boss, Nancy, made a potato salad with red potatoes. I have no idea how she made it but it was the best darn potato salad I’ve had. This Loaded Potato Salad was inspired by Nancy’s Potato Salad and is a pretty close second to hers if I do say so myself. 

Ingredients, Substitutions, and Additions

Potatoes – I like using Red Potatoes with the skin on for this Potato Salad.  Just make sure you wash them extra well. 

Hard Boiled Eggs: There are so many ways to make hard boiled eggs these days. Our favorite way is in the Instant Pot with the 5/5/5 method. With this method you pressure cook them for 5 minutes, allow the steam to naturally release for 5 minutes, and put them in an ice bath for 5 minutes. I’ve always had luck with this method and the yolk is perfectly cooked every time. 

Seasonings – To give the Potato Salad a bit of a kick, we season with Garlic Salt, Pepper, and Paprika.

Mayo – Mayonnaise will bind all our ingredients together. We try using Light Mayo whenever possible just so we feel better about eating a ton of it. 

Bacon – Bacon adds lots of flavor and just enough crunch. You can either fry up some bacon and dice it up or grab some Bacon Bits from the store. Either way you go, just make sure they are extra crispy.

Helpful Tips

  • Generally, I boil my potatoes for about 45 minutes. However, I know my potatoes are done when the skins start to crack. 
  • Make sure potatoes and eggs are completely cool before adding the cheese. We don’t want the cheese to melt.
  • Don’t add all the shredded cheese into the bowl of potatoes all at once. Doing so will make the cheese clump together. 
  • If you decide to use homemade bacon, we find the easiest way to fry a bunch up at once is to cut the bacon into 2 inch pieces, throw them into a large pot, and cook on medium heat until they are nice and crispy. Be sure to stir them every couple minutes to evenly cook and prevent them from burning.

Loaded Potato Salad

Ingredients for Loaded Potato Salad

  • 10 Red Potatoes
  • 6 Hard Boiled Eggs
  • 1 cup Mayo
  • 1 small Onion
  • 3 oz Bacon Bits
  • 4 oz Cheddar Cheese, shredded
  • 1 tsp Paprika
  • 1 tsp Pepper
  • 1 tsp Garlic Salt
  • Juice from Half a Lemon

 

Optional Toppings: 

  • French Fried Onions
  • Green Onions

Directions

Rinse potatoes and poke with a fork all the way around. Place potatoes in a large pot and fill with water 1 inch above the top of the potatoes. Bring to a boil and allow them to cook for 45 minutes or until potatoes are soft enough to push a fork through easily. Remove from heat and allow to cool to room temperature. Cut Potatoes into 1 inch to 1 1/2 inch pieces. Place cut potatoes into a large bowl. 

Dice Hard Boiled Eggs and Onions. Add these and the Bacon Bits to the bowl of Potatoes. Stir until combined. 

Stir in Shredded Cheese gradually into the bowl of Potatoes a little at a time until it has all been incorporated. 

In a medium mixing bowl, combine Mayonnaise, Garlic Salt, Pepper, Paprika, and Lemon Juice.  Pour contents into the bowl of Potatoes and stir until everything is fully combined. Serve and enjoy!

Optional: Top serving with Green Onions and French Fried Onions for extra crispiness and flavor.
