Our Momma's Peppered Steak
When I was growing up there were so many things that Momma would make that I have tried to recreate or put my own twist on. Peppered Steak is one of those meals that Momma would make about once every couple of months. When I knew she was making Peppered Steak I was always the first one in the house with my hands washed. The table would already be set and somehow I magically turned into to an angel asking her if she needed help. Oh the power of food. Momma’s Peppered Steak is a recipe that always puts a smile on my face.
Ingredients, Substitutions, and Additions
Steak – I always have made Momma’s Peppered Steak with a London broil, but if you can’t find one, flank steak or tri-tip will work. We can get a about 5 pounds of London Broil at our local wholesale club. It tends to be the cheapest way to buy it.
Bell Peppers and Onions – Bell peppers and onions are just a vital as the steak in Momma’s Peppered Steak. We use green bell pepper because they have a bitter, not sweet taste and yellow onions for a similar reason. We have tried using red bell pepper and onions but it leaves a sweeter aftertaste.
Seasonings – Momma always went simple on seasonings by using only pepper and garlic salt. I have tried using other seasonings and have found that adding some thyme, rosemary, and sage add awesome flavor. Dried minced garlic and onion enhance can also add tons of flavor. Use what you like.
Brown Gravy Mix – I have a large container of brown grave mix and we use 6 tbs of mix to 2 cups hot water. Two packets of brown gravy mix will make 2 cups of gravy for Momma’s Peppered Steak.

Ingredients for Momma's Peppered Steak
- 1.5 lb London Broil
- 2 large Yellow Onions
- 3 Green Bell Peppers
- 6 tbs Brown Gravy Mix
- 2 Cups Water
- 2 tbs Oil
Seasoning for Veggies
- 1 tsp Pepper
- 1 tsp Garlic Salt
Seasoning for Steak
- 1 tsp Pepper
- 1 tsp Garlic Salt
Directions
Prep Veggies, London Broil, Seasonings, and Brown Gravy: Wash and dry bell peppers (3 bell peppers). Slice onion (2 onions) and bell peppers into 1/4 inch slivers and place in a large bowl. Cut London broil into 1/4 inch slices. Measure out 2 cups water and 6 tbs brown gravy mix. Measure out seasonings for veggies (1 teaspoon pepper, 1 teaspoon garlic salt) and steak (1 teaspoon pepper, 1 teaspoon garlic salt) and place in a small bowl for later use.
Sauté Veggies and cook London broil: Bring a large pan up to temperature over medium/high heat and add oil (1 tablespoon). Stir in onion, bell peppers and veggie seasonings then sauté for 15 to 20 minutes or until bell peppers are soft. Remove mixture from pan and place into a bowl. Pour remaining oil (1 tablespoon) into the pan and increase temperature to high. Add in London broil and steak seasoning then cook for 7 to 10 minutes or until cooked through. Stir in sautéed onion and peppers and cook 5 minutes.
Mix in Brown Gravy, let stand, and serve: Heat water (2 cups) until boiling. In a large heat resistant bowl add water and brown gravy mix. Stir until brown gravy mix is fully dissolved. Add gravy into pan and mix to fully incorporate into steak, peppers, and onions. Turn off heat, cover, and let stand 5 minutes. Remove lid and serve over rice or mashed potatoes and enjoy!
