Ham and Veggie Frittata

Our Ham and Veggie Frittata

It wasn’t until recently that we started making frittata, or as Mike likes to call them oven omelets, and we truly have been missing out on this insanely easy to make breakfast. The crazy thing is you can feed the whole family in less than 45 minutes. And they are SO good! 

You really can add whatever you want in them but lately, our family has been enjoying the combination of Ham, Bell Pepper, Onion, Broccoli, and Spinach with a sprinkle of Feta on top. We like to serve our Ham and Veggie Frittata with a couple slices of avocado and a tiny bit of hot sauce. 

Ingredients, Substitutions, and Additions

Eggs – No frittata is complete without eggs. We use whole eggs, but if you are not into that substitute egg whites instead. 

  • Make sure to whisk your eggs really well to allow them to cover the entirety of your ham and veggies. 
  • To make them a little fluffier, you can whisk a tablespoon of milk to your eggs. 

Seasonings – We keep this one simple with just some salt and pepper added into our whisked eggs. If you are looking for something with a little more flavor, try adding some dried thyme or garlic salt. 

Veggies – Again, you can put whatever you want in these, but this time we are going with Broccoli, Bell Pepper, Onion, and Spinach. 

Cheese – If you’ve been here before, you may know we love cheese. For some reason, when making breakfast foods, we always gravitate towards Feta. If you are not a fan of Feta, substitute your favorite shredded cheese.

Ham – We keep things easy and grab a package of diced ham from the store. But you can be fancy if you have some ham left over from dinner that you can dice up. Speaking of a ham dinner, try out our Ham with Citrus Bourbon Glaze. 

Additions – Whether it’s an omelette or a frittata we always like to serve them with avocado and sour cream.

Ham and Veggie Frittata

Ingredients for Ham and Veggie Frittata

  • 6 large Eggs
  • 1/4 cup Ham, diced
  • 1/2 cup Broccoli 
  • 1/4 cup Red Bell Pepper
  • 1/4 cup Yellow Onion
  • 3/4 cup Spinach
  • 3 tbs Feta Cheese
  • 1/8 tsp Salt
  • 1/4 tsp Pepper

Directions

Prepare oven and serving dish: Preheat oven to 350° and lightly spray an 8″ pie plate or oven safe dish casserole dish.

Chop veggies: Chop broccoli into half inch pieces. Spinach should be finely chopped, and the Bell Pepper and Onion should be diced into 1/4-inch pieces. 

Heat ham and veggies: In a small pan, heat Diced Ham on medium for 3 minutes. Add Broccoli, Bell Pepper, and Onion into the pan and allow them to soften for an additional 3 minutes. Turn off heat and add spinach into the pan. Stir to incorporate into the veggies. Pour ham and veggies into prepared pie plate. 

Whisk eggs and pour into pie plate: In a medium bowl, whisk eggs with salt and pepper. Pour evenly over ham and veggies. 

Add cheese and bake: Sprinkle Feta on top of the eggs and transfer pie plate into the hot oven. Bake for 30-35 minutes. Remove frittata from the oven and allow to rest for 5 minutes. Serve and enjoy!
