Our Easy Cranberry Vanilla Pies
My family gets together, not just for the Holiday, but also for leftovers the next day because we always have tons of food. But one thing we don’t have much of are desserts. Enter our Easy Cranberry Vanilla Pies. These pies are delicious, easy to make, and best of all you get to utilize your leftover Cranberry Sauce.
To make these Easy Cranberry Vanilla Pies, we use Mini Graham Cracker Crusts, Instant Vanilla Pudding, and our Kick’n Cranberry Sauce. Throw them all together and you have yummy, adorable pies to share with the whole family.
Ingredients, Substitutions, and Additions
Graham Cracker Crust – We love these pies because of how easy they are to make. This is mainly because we us the store bought crust. After cooking a huge Holiday Feast, we don’t want to be slaving away in the kitchen the next day. However, if you have the energy you could totally make the crust at home. Check out the crust we make with our S’mores Cream Pie. You could use this crust in either a full pie plate or muffin tins if you still want to make individual pies. Instructions for this crust are shown below.
Pie Filling – Again, we want these to be easy to make. So we used Instant Vanilla Pudding, however, you could use any flavor you want. Chocolate or even Banana might be tasty.
Milk – We do need some milk for our pudding. But no worries to my dairy challenged friends out there. It works just fine with lactose free milk.
Cranberry Sauce – We love our Kick’n Cranberry Sauce. It’s just tart enough with a hint of orange that makes it perfect for our pies.
Alternative Toppings – Although, these pies are made with our leftover Kick’n Cranberry Sauce, you could use any pie topping if you are just looking for something quick and easy to make. A Blueberry or cherry pie topping would be very tasty.
Easy Graham Cracker Crust
If you don’t want to use a store bought crust, try this Easy Graham Cracker Crust from our S’mores Cream Pie recipe.
- 180g (about 12 crackers) Graham Crackers, crushed
- 6 tbs Butter, melted
- 1/4 cup Sugar
Prepare homemade Graham Cracker Pie Crust by combining crushed Graham Crackers and Sugar.
Once fully mixed together, add in melted Butter. Consistency should be moist enough to be able to mold around a pie plate or muffin tin.
Transfer crust and use a rounded bowl or spoon to firmly shape the crust around the dish, making sure to cover the sides as well. Place in refrigerator until filling is ready to add.
Ingredients for Easy Cranberry Vanilla Pies
- 1 pkg Mini Graham Cracker Crusts
- 3.4oz Box of Instant Vanilla Pudding
- 2 cups Milk, 2% or whole
- 1/2 cup leftover Kick’n Cranberry Sauce
Directions
In a medium mixing bowl whisk together the Instant Vanilla Pudding and Milk for 2 minutes. Let pudding set for 5 minutes.
While pudding is setting remove Mini Graham Cracker Crusts from packaging.
Using a piping bag or a resealable plastic bag with the corner cut off, pipe the pudding into each Mini Graham Cracker Crust.
Top each pie with a dollop of Kick’n Cranberry Sauce. Serve immediately or refrigerate until ready to eat.
