Our Chicken with Broccoli Asparagus Orzo

Grandma was the inspiration for Chicken with Broccoli Asparagus Orzo. She asked for something that was not so stick to your ribs like the Beef stew we had the previous two nights. I looked in the refrigerator and pantry then came up with this pasta creation. We always have chicken tenderloins, broccoli and asparagus on hand so why not put them together. Everything came together wonderfully and this meal has become a staple in the rotation for our family.

Ingredients, Substitutions, and Additions

Protein – Try and use some boneless skinless chicken thighs instead of chicken tenderloins. A thinly sliced pork chop in place of chicken is a tasty substitution.


Dry Seasonings – Add some red pepper flakes for some additional heat. Smoked paprika and Cayenne pepper can enhance the flavor of your dish.


Fresh Veggies and Herbs – Add some diced onion for additional flavor. Spinach is also a great addition and pairs well with the broccoli and asparagus.


Toppings – Freshly chopped green onions or parsley make a great topping. A balsamic glaze drizzled atop is amazing and adds more flavor. Add a couple drops of hot sauce for some heat.

Chicken with Broccoli Asparagus Orzo Ingredients

  • 1 lbs Chicken Tenderloins
  • 4 to 8 Cloves Garlic
  • 1 cup Asparagus
  • 1 cup Broccoli
  • 8 oz Orzo
  • 2 cups Chicken Broth
  • ½ cup Heavy Cream
  • 1 tbs Butter
  • ½ cup Shredded Parmesan Cheese
  • 1 tsp Poultry Seasoning
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 1 tbs Oregano
  • 1 tbs Onion Powder
  • 1 tbs Garlic Powder
  • ½ tsp Black Pepper
  • ½ tsp Salt
  • 2 tbs Olive Oil

Directions

Meal Prep

Remove chicken tenderloins from packaging and place on a plate in a single layer. Let the chicken sit for 15 minutes to bring them up to room temperature. This will help prevent uneven cooking and possible burning of the chicken.

While the chicken tenderloins are resting, prep your veggies. Rinse and cut both the asparagus and broccoli into ½ inch pieces. Include the stem of the broccoli to add flavor and body to the dish. Lastly peal and dice garlic cloves.

In a large pot bring 8 cups of water to a boil. Add a pinch of salt as well as the Orzo into the pot and cook according to instructions on its packaging. When the Orzo is finished cooking, remove from heat, drain, and set aside.

Cooking up the Chicken and Veggies

While waiting for water to come to a boil, combine poultry seasoning, rosemary, thyme, oregano, onion powder, garlic powder, and black pepper in a small bowl then sprinkle evenly over the chicken tenderloins to coat. Bring a large pan up to medium high heat and add 2 tbs oil. When the oil begins to ripple, place the chicken tenderloins in the pan and cook 5 to 7 minutes. Flip and repeat for 5 to 7 minutes or until the internal temperature is 165 degrees. Remove the chicken tenderloins from the pan and set aside.

Using the same pan, reduce the temperature to a medium heat and add butter. When the butter is melted add the diced garlic, asparagus and broccoli and sauté for 5 to 7 minutes. Pour in chicken broth and bring to a boil. Once the mixture begins to boil add heavy cream and reduce heat to low. Cover pan and simmer for 5 minutes stirring occasionally to prevent burning. Stir in the cooked Orzo and parmesan cheese. Cover and let sit for 5 minutes to thicken sauce. Plate broccoli and asparagus orzo and chicken. Enjoy!

Flip and cook an additional 5 to 7 minutes or until internal temperature reaches 165 degrees. Remove chicken from the pan and set aside.
  • Using the same pan, reduce temperature to a medium heat and add butter. When the butter is melted, add diced garlic, asparagus and broccoli. Sauté for 5 to 7 minutes.
  • Add 2 cup of chicken broth to the pan and bring to a boil. When mixture begins to boil, add heavy cream and reduce heat to low. Cover and simmer for 5 minutes stirring occasionally. Stir in Orzo and parmesan cheese. Cover and let sit for 5 minutes.
  • Plate broccoli and asparagus orzo and chicken. Enjoy!
