Our Tart Cherry Pie Filling

What’s your favorite pie? Mine is cherry pie hands down. But to make a great cherry pie, you have to have a great filling. For me the best filling is our Tart Cherry Pie Filling. It’s not too sweet, has a great flavor, and is easy to whip up. The best thing about cherry pie filling is you don’t have to limit yourself to pie. You can enjoy it on top of your ice cream, in cakes or pastries, and my favorite, on cheesecake.

Ingredients, Substitutions, and Additions

Tart Cherries – Pie filling can already be sweet, so I love the flavor that tart cherries bring to this filling. I buy them canned at my local grocery store. Luckily, my store sells their own brand of canned tart cherries and let me tell you they taste just as awesome as the fancy brands.

Sugar – Although I like a Tart Cherry Pie Filling, we do need some sugar in this recipe. I do this to taste, and find I like about 1/2 a cup.

Slurry – The sugar will help thicken up the juice from the cherries a bit but we need to add a little slurry to the mixture to get the right thickness for our filling

Ingredients for Tart Cherry Pie Filling

  • 1-14.5 oz can Tart Cherries
  • 1/2 cup Sugar
  • 1/2 tsp Vanilla 

Slurry

  • 2 tablespoons Corn Starch
  • 1/4 cup Water

Directions

Measure ingredients and mix ingredients for slurry: Measure out Sugar (1/2 cup) and Vanilla (1/2 teaspoon) and set to the side. In a small bowl, whisk corn starch (2 tablespoons) and water (1/4 cup) until fully incorporated.

Combine tart cherries, sugar, and vanilla for Tart Cherry Pie Filling

Simmer cherries, sugar, and vanilla: In a medium sauce pan, bring cherries (1-14.5 ounce can), sugar, and vanilla to a low simmer at medium heat. Allow to simmer for 15-20 minutes or until cherries turn a deep red color. Stir occasionally.

Add Slurry for Tart Cherry Pie Filling

Add slurry: Slowly add half the slurry into the cherries and stir. Allow to simmer for 2-3 minutes to thicken, stir constantly so the filling doesn’t burn to the bottom of the sauce pan. Add additional slurry, if needed, for desired thickness. Remove from heat.
