Our Chicken and Tortellini Soup

It is that time of year again. What do I mean? Soup Season. I love everything soup and believe soup season is 365 days a year. Minda on the other hand has different ideas. When the high for the day is in the high 40’s to low 50’s Minda gives me the go ahead to start thinking about soup. 

Nothing beats a big bowl of soup on a chilly day. With so many different types of soup it can be hard to choose when everything sounds good. Chicken is always in our freezer and is perfect in soup. We wanted to do something different than potatoes or noodles this time. Minda and I love our Chicken and Tortellini soup, it always hits the spot. 

Ingredients, Substitutions, and Additions

Chicken – Chicken is perfect in our Chicken and Tortellini Soup. Minda loves Chicken breast and I love Chicken thighs. Both are great in soup. Switch it up from time to time. 

Veggies and Herbs– We love using carrots, zucchini, onion, and garlic. We dice or slice them thin to have them cook fast. 

Dry seasonings – Use what you like. I season the chicken before we cook it and have separate seasonings that are added to the veggies.  

Tortellini – We use dry tortellini but have use frozen and fresh. Use what you like. 

Toppings – Any soup is a perfect canvas for additions. Add some of your favorite hot sauce or cheese. Minda and I love to add French fried onions and croutons. 

Helpful Tips...

  • After you pull your Chicken out to let it rest, it may not be fully cooked, but this is ok. It will finish cooking when we add it back to the soup. 
 
  • Make sure not to overcook the Tortellini. It can become mushy when reheated. We found for best results add the Tortellini last and cook it for half of the time on the package directions, then turn off the heat and let it sit for 10 minutes.

Chicken and Tortellini Soup

Ingredients for Chicken and Tortellini Soup

  • 1.5 lbs Chicken Breast
  • 3 Carrots
  • 2 large Zucchini 
  • 1 medium Onion
  • 1 14.5 oz Can Italian Stewed Tomatoes 
  • 1 tbs Minced Garlic
  • 1 10 oz bag Dried Tortellini
  • 8 Cups Chicken Broth 
  • 2 tbs Flour 
  • 2 tbs Butter 
  • 2 tbs Oil

Dry Seasonings (Soup)

  • 1 tsp Dried Rosemary
  • 1 tsp Dried Thyme
  • 1 tbs Dried Oregano
  • 1 tbs Onion Powder
  • 1 tbs Garlic Powder
  • ½ tbs Tomato Bouillon 
  • 2 Bay Leaves

Dry Seasonings (Chicken Rub)

  • 1 tbs Italian Seasoning 
  • ½ tsp Salt
  • ½ tsp Pepper 

Directions

Chicken and Veggie prep: Remove chicken from packaging and let come to room temperature. Prep Dry seasonings for chicken rub and soup and place into small bowls. Coat chicken evenly with rub. Wash and dry all veggies. Cut Carrots, Zucchini, and Onion into ½ inch pieces. 

Cook Chicken and dice into 1-inch pieces: In a large pot or Dutch oven bring oil up to heat over medium/high. When the oil begins to ripple, add chicken breast and cook for 10 minutes flipping halfway through. Remove and let rest for 10 minutes then dice into 1-inch pieces. 

Deglaze pot, add veggies and cook for 5 minutes: Stir in ¼ cup of chicken broth into pot to deglaze. Mix in carrots, onion, and garlic and cook for 5 minutes to soften. 

Thicken broth with butter and flour: Add butter and stir until melted then mix flour in stirring continuously for 1 minute to prevent burning. 

Stir in Stewed Tomatoes, Chicken Broth, Zucchini, and diced Chicken. Simmer for 30 minutes: Open stewed tomatoes and remaining chicken broth then add into pot along with zucchini and diced chicken. Bring soup to a boil then reduce to a simmer and cook for 30 minutes.

Cook Tortellini and serve: Bring soup back to a boil and stir in tortellini. Boil for half of the time on the packaged directions then turn off heat and let sit for 10 minutes. Top with favorite toppings, serve and enjoy.
