BBQ Chicken Sandwiches are perfect for a weekday meal. Made with some meal prepped shredded chicken, these are perfect for a busy family.

Our BBQ Chicken Sandwiches
I’ve said it before and I will say it again, combine anything with bread or rice and it immediately becomes 100 times better! Shredded chicken on its own is tasty but to make a meal of it we need to do something with it. Well, these BBQ Chicken Sandwiches are the perfect complement to our Shredded Crock-Pot Chicken. All we did was throw some of our meal prepped shredded chicken onto a tasty Brioche Bun. Add some BBQ Sauce and a bit of Coleslaw for some crunch. These were SO GOOD and ridiculously easy to make. This would be the perfect meal for a busy weekday.
Ingredients, Substitutions, and Additions
Shredded Chicken – We like to meal prep on Sunday to get us ready for the week, so our Shredded Crock-Pot Chicken is perfect for this recipe. But you could make these with a rotisserie chicken from the store or even some sliced Fried Chicken Strips if you prefer.
Brioche Buns – We tried these Sara Lee Artesano Brioche Buns for the first time when we made these BBQ Chicken Sandwiches for this recipe. I don’t know where these have been my whole life, but I highly recommend them. They are soft and have a great flavor. That said, they are hard to find at my grocery store…probably because they are SO GOOD, so any hamburger bun or brioche bun is going to work just fine.
– To make our sandwich even better we like to toast each side with a bit of mayo.
BBQ Sauce – Whether you use Kinder’s, Sweet Baby Rays, Kraft…it doesn’t matter. Just pick your favorite BBQ Sauce and use that. This last time we went with Kinder’s Roasted Garlic. It was very tasty!
Coleslaw – Coleslaw is optional, depending on what your preferences are. However, we love the crunch it gives to our sandwiches and the extra bit of tangy flavor adds a whole new dimension to the BBQ Chicken Sandwich.

Ingredients for BBQ Chicken Sandwiches
- 2 cups Shredded Chicken (Shredded Crock-Pot Chicken)
- 4 Brioche Buns
- 4 tbs Mayonnaise
- 1 cup Coleslaw (Homemade or Storebought)
- 4 tbs BBQ Sauce
Directions
Heat Shredded Chicken in a pan or microwave until warmed.
Spread Mayonnaise on each side of all four Brioche Buns. In a large pan or on an electric skillet, toast buns mayonnaise side down until buns are a toasty brown color.
Remove Brioche Buns from the pan and layer your sandwiches with equal amounts of Shredded Chicken, BBQ Sauce, and Coleslaw. Serve and enjoy!
