In a recent Test Kitchen session with Mike, we tried out different kinds of baked potatoes. Baked potatoes for me were not always something to look forward to. They just didn’t appeal to me. It wasn’t until I was in my twenties and at a restaurant that had a whole page dedicated to different baked potato toppings that I realized you could have more than just some butter and a dash of salt and pepper. Instantly, my mind was blown! From then on baked potatoes were a staple dinner for us and Mike would always load up my potato with cheese, bacon, sour cream, and sometimes he would even add some onions on top. Mmm, so good!

Back to our Test Kitchen, normally, we only feature our top scoring Test Kitchen idea in our Kick’n Kitchen. Well, I’m breaking my own rule. One of our ideas was a Baked Sloppy Joe Potato and I loved it so much I don’t care that it didn’t score the highest out of all the other potatoes…although it did score a 4.75 out of 5 so not something to be too disappointed about. To me, this one scored a 10! It was SO GOOD!

Our Baked Sloppy Joe Potato features a can of Sloppy Joe Sauce incorporated into cooked ground beef. Spoon this mixture onto your baked potato, add a little cheese, and some French fried onions for crunch and you got yourself a tasty dinner.

Ingredients, Substitutions, and Additions

Sloppy Joe Sauce – The only complaint from our test kitchen was they wanted more sauce with the ground beef to completely smother their potato. I thought it was pretty darn good as is, however, if you like yours a little more saucy just add another can of the Sloppy Joe Sauce and you will be fine.

Baked Potatoes – Recently, we have discovered that seasoning the potato before adding it to your grill or oven enhances the flavor of the potato overall. This is completely optional, however, taking an extra couple minutes to season the potato is totally worth it if you eat the skin of the potato.

Toppings –

Cottage Cheese – I really like the creaminess sour cream adds to a potato, however, in my opinion it’s not something that would have gone with a sloppy joe. Instead, I tried some low-fat cottage cheese and it really brought the creamy texture I was looking for. Very good addition.

Hot Sauce – Mike likes extra spice on his potatoes and added some of his favorite hot sauce for an extra kick.

French Fried Onions – These are one of our favorite toppings to include on our potatoes. It adds and nice crunchy texture.

 

Baked Sloppy Joe Potato

Bake Potato on the BBQ

We always cook our potatoes on the BBQ, especially during the warm months to keep our house as cool as possible.

1. First we preheat the grill to 400-450 degrees.

2. Wash the potatoes to get any dirt off.

3. Grab two pieces of foil about 12-14 inches long depending on how big your potatoes are.

4. Spray the center of one foil sheet with non-stick cooking spray.

5. Set down your potato and spray the top of your potato with non-stick cooking spray.

6. Season the top of the potato with salt, pepper, garlic powder, and onion powder. Flip the potato and season the other side.

7. Fold the foil so it is tightly secured around the potato.

8. Take the second sheet of foil and fold it around the potato to ensure the potato is completely covered and protected from the flame.

9. Place the foiled potatoes on the BBQ and close the lid. BBQ the potatoes for 60 minutes, flipping them in 20 minute intervals to ensure they do not burn. Remove from BBQ and serve with desired toppings.

 

*Non-Stick Cooking Spray – I know it sounds weird, however, it helps prevent the potato from burning in the foil. We tried spreading a bit of Olive Oil on the potato before and it was a BAD idea. DO NOT USE OIL. It leaks through the foil and causes the BBQ to flame and smoke.*

Ingredients

  • 4 Baked Potatoes
  • 1 Can Sloppy Joe Sauce
  • 1 tbs Butter (per potato)
  • 1/2 c Shredded Cheese
  • 1/4 c French Fried Onions

Directions

Bake a potato your favorite way, microwave, oven, or BBQ. See above for our favorite way of baking our potatoes.

Bring a large pan up to a medium/high heat. Add ground beef to the pan and cook for 8-12 minutes while using a spatula to chop up the beef into tiny pieces. Once ground beef if completely cooked, add the Sloppy Joe Sauce. Stir to completely incorporate the sauce into the ground beef and turn off the heat.

Cut a baked potato in half length wise. Use a fork to mash the insides and flatten the potato and butter both sides.

Spoon desired amount of Sloppy Joe mixture onto the potato. Sprinkle Shredded Cheese and French Fried Onions on top. Serve and Enjoy!
