Easter Snack Mix

Easter is a great time to try out a new snack mix. This year we mixed things up and took some of our favorite Easter treats to create our Easter Snack Mix.

Our Easter Snack Mix

The best thing about a snack mix is you can add whatever you want. You can go sweet. You can go savory. You can go sour or salty. Whatever you crave, do it. It’s Easter time, so we went with sweet. We enjoy the sweet flavors of Easter that help bring back the happy memories that we enjoyed as children. The star of the show is our Biscoff Rice Chex based off of the tasty muddy buddy. Ingredients, Substitutions, and Additions

Marshmallows – In our search for the right marshmallows to add to our Easter Snack Mix, we originally thought the pastel colored mini marshmallows from our youth would be the perfect addition. Much to our surprise we could not find them anywhere. But that’s okay. We found something even better. Because it is Easter season, we found Jet-Puffed bunny marshmallows. They are perfect!

Cadbury Mini Eggs – It’s not Easter without Cadbury Mini Eggs in our house. These were a must for our Easter Snack Mix.

Biscoff Cookie Butter – We discovered Biscoff Cookie Butter years ago. It’s one of our favorite things to dip apples and celery in for a sweet treat.

Rice Chex – We are going to combine our cookie butter with some Rice Chex for that classic muddy buddy treat with a twist. Additionally, we will add some plain Rice Chex to the snack mix to help with some of the sweetness from all our other ingredients.

Popcorn – We needed something else to cut some of the sweetness from our snack mix. What’s better that popcorn? We love Skinny Pop popcorn for this but you could pop your own corn. Whatever you like best.

Ingredients for Easter Snack Mix

  • 1 cup Bunny Marshmallows
  • 1 cup Cadbury Mini Eggs
  • 1 cup Rice Chex
  • 1 cup Popcorn

Biscoff Rice Chex

  • 3 cups Rice Chex
  • 7 oz Biscoff Cookie Butter
  • 2 tbs Confectioners Sugar

Directions

Biscoff Rice Chex

Combine ingredients for Biscoff Rice Chex: Measure out Rice Chex (3 cups) and transfer to a large bowl. Scoop cookie butter (7 ounces) to a medium bowl. Warm cookie butter in the microwave 30 second intervals until it reaches as soft, easy to mix, state. Pour cookie butter over Rice Chex and gently mix with a large spoon. Transfer Rice Chex to a large sheet pan and place in the refrigerator for 10 minutes, to cool and harden. Pour Rice Chex into a gallon sized Ziplock bag and add Confectioners Sugar (2 tablespoons). Shake bag until all Rice Chex has been coated in sugar and set aside.

Measure remaining ingredients and combine them with Biscoff Rice Chex in a large bowl: Measure out Bunny Marshmallows (1 cup), Cadbury Mini Eggs (1 cup), Rice Chex (1 cup), and popcorn (1 cup) and add them to a large bowl. Add Biscoff Rice Chex mix to the bowl and stir. Serve and enjoy!
