Our Red Velvet Holiday Cookies
If you are like my mom and I you love to bake come holiday season. Well it’s that time of year again and we are looking for some cookies that are easier to make this year. Lately I’ve really been on this baking cookies from a boxed cake mix trend. I find it’s the fastest way to make cookies and they turn out great!
This time we went with a red velvet cake mix. Paired with white chocolate drizzled on top these are perfect for the holiday season. Serve these Red Velvet Holiday Cookies on your holiday dessert table, box them up and give them as gifts, or just make them for yourself to enjoy.
Ingredients, Substitutions, and Additions
Cake Mix – Cookies made with a boxed cake mix are the easiest way to start your cookie dough. Now, if you have never made cookies from a cake mix before, this is your sign. They are light, fluffy, full of flavor, and so much faster to make than making them from scratch. We are using the Red Velvet Cake Mix, any brand is fine.
Confectioner’s Sugar – Prior to baking cookies, we are going to roll the dough in confectioner’s sugar. I love the crackle effect this makes after baking them.
White Chocolate Melting Wafers – White chocolate drizzled on top of these cookies is the perfect decoration as it gives the cookie that classic red and white look that we associate with candy canes. It also gives the cookie a little bit of texture as the chocolate hardens
Butter and Eggs – Rather than following the cake mix directions, we are going to add just two eggs and a couple tablespoons of softened butter.
Sugar Sprinkles (optional) – I sprinkled a couple of my cookies with red sugar sprinkles for some added holiday cheer.
Decorating Tips…
Melting Wafers: I used a glass bowl on top of a pot to heat my kisses up on medium high heat. However, you can use a double broiler if you have one.
Drizzle Chocolate: Once chocolate is completely melted use a spoon to drizzle chocolate back and forth over cookies.
Sprinkles: If you add sprinkles on top of the cookies do so before the chocolate hardens. Start with a small amount of sprinkles and add more as desired.
