Our Double Chocolate Candy Cane Cookies

I have been waiting for the Hershey Candy Cane Kisses to come back for months and driving my family nuts because I had an idea for a holiday cookie I just couldn’t get out of my head. I wanted to make a chocolate cookie with candy cane Kisses. Originally, I wanted to melt the Kisses and dip one side of the cookie in it…but what if the melted kisses turn the white chocolate pink? My back up plan is to chop the kisses up and sprinkle them on top of the cookies before they go into the oven. Because I can be extra sometimes, I did them both. I will let you decide which one you like better. 

Ingredients, Substitutions, and Additions

Cake Mix – Originally, I was going to make a chocolate cookie from scratch…but the holidays are a busy time for everyone. Those of us that do lots of baking during this time need things to be quick and easy. 

Enter our boxed cake mix. Now, if you have never made cookies from a cake mix before, this is your sign. They are light, fluffy, full of flavor, and so much faster to make than making them from scratch. We are using the Triple Chocolate Fudge Cake Mix from Betty Crocker.

Hershey’s Candy Cane Kisses – At the grocery store, they do have different brands that make candy cane or peppermint chocolate pieces perfect for baking. However, I like the crunch you get from the sprinkles inside the Kisses. 

Chocolate Chips – Who doesn’t want extra chocolate chips in their chocolate cookies? I do! 

Butter and Eggs – Rather than following the cake mix directions, we are going to add just two eggs and a couple tablespoons of softened butter.

Decorating Tips...

Crushed Kisses

  • If you want to decorate your Double Chocolate Candy Cane Cookies with the “crushed Kisses” look, chop about a half a cup of kisses and place them in a bowl. Scoop your cookie dough into a ball and roll just the top of the ball in the chopped Kisses. Place your cookie dough on a prepared cookie sheet, Kisses side up, and take some of the larger chopped Kisses and place them on top.
    • When you roll the ball in the Kisses, it only picks up the smaller bits of Kisses. So you want to top them with a couple larger pieces. 
    • Don’t press too hard when placing the Kisses on top of the cookie dough. The dough is very soft and will flatten and spread as it bakes.

Melted Kisses

  • I used a glass bowl on top of a pot to heat my kisses up on medium high heat. However, you can use a double broiler if you have one. 
  • When melting the Kisses chop about a quarter cup of kisses and place them in your bowl. Top with 5-6 more whole Kisses. This will give you a good swirl of the white and red chocolate when you dip the cookies in. 
  • As you dip in your cookies add 2-3 more kisses into the chocolate to melt as needed. 
  • Try not to stir the Kisses as they melt. You will end up with pink chocolate. 
  • As you dip one side of the cookie into the chocolate, wiggle the cookie back and forth for a swirl effect. 

Good Ideas...Gone Wrong

Don’t get cute and try to put a whole kiss in the middle thinking it would turn out like cookies we had as kids. It doesn’t work. The cookie is so soft it flattens like a pancake and looks ridiculous.

Ingredients for Double Chocolate Candy Cane Cookies

  • 1 box Betty Crocker Triple Chocolate Fudge Cake Mix
  • 6 tbs Unsalted Butter, softened 
  • 2 Large Eggs
  • 1 bag Hershey’s Candy Cane Kisses

Directions

Preheat oven – Preheat oven to 350°.

Mix Cake Mix, Butter, and Egg: With an electric mixer or whisk, combine Triple Chocolate Fudge Cake Mix, Butter, and Egg until batter is smooth. 

Stir in Chocolate Chips: Add Chocolate Chips into the mixing bowl and stir until fully combined. 

For “Crushed Kisses” decoration: Spoon cookie dough into 1 inch balls, roll top of cookie in chopped Kisses and place on non-stick cookie sheet 2 inches apart. Bake for 7 minutes. Remove from oven and allow to cool 2-4 minutes before transferring to a cooling rack. Serve and enjoy!

For “Melted Kisses” decoration: Spoon cookie dough into 1 inch balls and place on non-stick cookie sheet 2 inches apart. Bake for 7 minutes. Remove from oven and allow to cool for 2-4 minutes before transferring to a cooling rack. 

Once cookies are cool, melt Kisses in a small bowl. Carefully dip one side of each cookie into the melted Kisses and set on a clean cookie sheet lined in parchment paper or foil. Allow chocolate to harden fully and enjoy.
