Our Leftover Turkey Stew
Oh, the joy that the holidays bring! From the excitement of seeing family and friends to the wonderment of delicious food, but then in a flash it’s over. Minda and I have always enjoyed the time spent cooking our holiday feasts but there is always so much food leftover. After a couple of days, we want something other than turkey sandwiches and leftover holiday sides. About 10 years ago, I went crazy about soups and stews, NOT MINDA, and decided to try out a leftover stew with Turkey. Minda likes soups and stews but not like I do. Now I always make sure to upsize our Kick’n Holiday Turkey to have enough leftovers to make our Leftover Turkey Stew.
Ingredients, Substitutions, and Additions
Broth – Broth is an amazing way to incorporate flavor into your stew. Try our Holiday Turkey Stock, it is the perfect base for your Leftover Turkey Stew.
Leftover Turkey – I love soups and stews, so I make sure to save leftover turkey. Add however much turkey you like. We use around 6 cups of turkey for our Leftover Turkey Stew.
Fresh Herbs – Add some sprigs of thyme and rosemary while simmering your stew to help enhance the flavor.
Veggies – For our Leftover Turkey Stew, we like to use potatoes, carrots, celery, garlic, and onion because that’s what we always have on hand, but at times we will add some zucchini or broccoli to change it up a bit.
Dry Seasonings – I add a couple of bay leaves and salt during the simmering process.
Helpful Hints
- We use 12 cups of liquid in our stew. This is a lot of liquid, so we use 8 cups of turkey stock and 4 cups of water.
- If you don’t have any homemade turkey stock on hand, store bought stock works great.
- When using sprigs of fresh herbs, use some cooking twine to tie them into small bundles for easy disposal.
- We use veggies that allow us to control the size. We love using baby potatoes in our stew, but you can cut whole potatoes into chunks the size you prefer. On the flip side we use whole carrots, baby carrots work just as good.

Ingredients for Leftover Turkey Stew
- 2 lbs Baby Potatoes
- 5 large Carrots
- 5 stocks Celery
- 1 large Onion
- 4 cloves Garlic
- 8 cups Homemade Turkey Stock
- 4 cups Water
- 6 cups Leftover Turkey
- 2 sprigs Thyme
- 2 sprigs Rosemary
- 3 Bay Leaves
- 1 tbs Kosher Salt
Directions
Wash and dry all veggies. Cut Carrots, Celery, and Onion into 1-to-2-inch pieces and mince Garlic.
Add all the veggies into a large pot and cover with Turkey Stock and Water. Bring to a boil over a high heat then reduce heat to a medium/low. Add Rosemary, Thyme, Bay Leaves, and Kosher Salt. Simmer for 2 hours.
Remove Rosemary, Thyme, and Bay Leaves and add the Leftover Turkey meat into the pot. Cook an additional 30 minutes. Remove pot from heat, serve and enjoy.
