Our Ham with Citrus Bourbon Glaze

Every holiday season we enjoy having a big dinner with all of our family and friends. Usually, I make our Kick’n Holiday Turkey, but this time I have been tasked with something I have never done before, a ham. Minda and I love making ham sandwiches as there are always leftovers. This being something different from what I normally get to make, I wanted to make something delicious but wasn’t sure where to start. Deciding I wanted to have something sweet to go along with the smokiness of the ham I wanted to try a glaze with orange and bourbon. Minda loved the idea, and that’s how we created our Ham with Citrus Bourbon Glaze.

Ingredients, Substitutions, and Additions

Ham – We like to slice our own ham, so we use a fully cooked ham shank portion. If you want to use a spiral cut ham it works perfectly with our glaze. 

Glaze – I love how citrus flavors pair perfectly with the bourbon. The sweet stickiness of citrus and honey along with the back notes of the bourbon make a marvelous addition to the smoky ham. If orange is not your favorite flavor, try using pomegranate or plums for your glaze.

Helpful Tips...

  • Let your ham come to room temperature. It will take about 1 hour for a 12 lb. ham.
  •  Trim some of the fat off the ham. You want to leave about ¼ of an inch. 
  •  Use parchment paper under your aluminum foil. This will help prevent the burning.
  •  Make your glaze while your ham is coming to room temperature. This will help it thicken. 
  •  Add water to the bottom of the pan when removing aluminum foil to help prevent your glaze from burning.

Ham with Citrus Bourbon Glaze

Ingredients for Ham with Citrus Bourbon Glaze

  • 1 – 12 lb. fully cooked Ham Shank Portion 

Citrus Bourbon Glaze

  • Zest from ½ of Orange 
  • Juice from ½ of Orange
  • 2 tbs Brown Sugar 
  • 2 tbs Unsalted Butter
  • 2 tbs Bourbon
  • 1 tsp Vanilla
  • ¼ cup Honey

Directions

Preheat oven to 350 degrees. Remove Ham from packaging and trim fat leaving ¼ inch. Using a sharp knife score trimmed ham in a crosshatch pattern. Place it on a rack in a roasting pan. Cover with parchment paper and aluminum foil then let come to room temperature.

In a small pot melt butter and brown sugar over medium heat for 4 minutes or until fully incorporated. Continually stir to prevent burning. Pour in your bourbon and stir for 1 minute to help burn off some of the alcohol. Add vanilla, honey, orange zest and juice and cook for 2 to 3 minutes or until heated.

Put ham into oven and cook for 1 hour and 45 minutes.

Remove parchment and foil from your ham and apply ½ of your citrus bourbon glaze. Cook for an additional 1 hour brushing the remaining citrus bourbon glaze halfway through. Remove ham from oven and let rest 15 to 20 before carving. Serve and enjoy.
