Our Smashed Cheesy Brussel Sprouts
Brussel Sprouts have always been a staple in my house when I was growing up. When I was young, we would have them at least once a month. I have always loved them, but Minda is a completely different story. She never tried Brussel Sprouts until I came along. Minda believed the story that Brussel Sprouts were the nasty vegetable that were only around during Thanksgiving for the grumpy adults. The first time we tried them as a family, I was afraid that our son was going to take after Minda. Luckily, I was able to turn their frowns upside down with my love for the vegetable. Brussel Sprouts are an amazing vegetable and have crazy potential for delicious flavor that will enhance your meal. Our Smashed Cheesy Brussel Sprouts definitely deliver on the awesomeness.
Ingredients, Substitutions, and Additions
Cheese – We love parmesan on our Smashed Cheesy Brussel Sprouts but will also use a mixed Italian blend that has mozzarella, smoked provolone, parmesan, and romano.
Dry Seasonings – Italian seasoning is a great addition. Some crushed red pepper flakes add a hint of heat if you can handle it.
Topping – I love putting a balsamic glaze on top while Minda prefers a couple drops of hot sauce.
Butter – Olive oil is an option instead of butter for the seasoning mixture. Every so often I will use a little bit of bacon grease in the butter to give it an amazing smokey flavor.

Ingredients
- 1 lb Brussel Sprouts
- 8 oz Shaved Parmesan
- 2 tbs Melted Butter
- 1 tbs Garlic Powder
- 1 tbs Onion Powder
- 1 tsp Salt
- 1 tsp Pepper
- Non-Stick Cooking Spray
Directions
Preheat oven to 400 degrees. Line a large cookie sheet with aluminum foil then spray with non-stick spray and set aside.
Wash and pat dry the Brussel Sprouts with a paper towel. Cut off the root end and remove any loose leaves.
In a medium microwave safe bowl melt 2 tbs Butter. Add in salt, pepper, onion and garlic powder. Stir until completely mixed and set aside.
In a large pot bring 8 cups of water to boil over high heat. Add Brussel Sprouts directly into the boiling water. Let them cook for 5 to 7 minutes or until their fork tender. Remove from water and strain. Let the Brussel Sprouts sit for 5 minutes.
Using a cutting board and the bottom of a heavy cup, smash the Brussel Sprouts and place them on the pre-sprayed cookie sheet. Spoon half of the melted butter mixture on the Brussel Sprouts. Place in oven and cook for 15 minutes. Pull Brussel Sprouts out and flip. Spread the remaining Butter mixture and Shaved Parmesan evenly and return to the oven for 15 minutes. Remove cooked Brussel Sprouts from the oven and plate. Serve and enjoy.
