Easy 7 Minute Toffee

Every year, around the holidays, my mom and I make toffee. It being just two ingredients and 7 minutes of cooking makes it one of the easiest and cheapest things to make to bring to potlucks, give as gifts, or just enjoy with the family. The best part of this recipe is, we don’t use a candy thermometer. They always seem to get in our way, so we just time exactly 7 minutes from when we first see it start to bubble in our pot. Turns out perfect each time.

One thing I love to make in the fall is a Pumpkin Pie with Gingersnap Crust. Unfortunately, this year, my oven is on the fritz. Rather than skipping this tasty dessert altogether, we are going about it a little differently and serving up individual Gingersnap Pumpkin Pie Custard Cups. To do this, we are going to reuse our leftover Gingersnap Cookies to form a crumb base and top with our Pumpkin Pie Custard which we will make on the stove.

Growing up, one of my favorite things to do as a kid was roast marshmallows for s’mores. When we weren’t able to roast marshmallows but still had a craving for chocolate marshmallowie goodness, my mom would whip us up some s’mores in the microwave. 

Well, my new favorite type of s’mores is in the form of a pie. The best part, it only takes 30 minutes to make and there is no baking involved. 

This S’mores Cream Pie consists of a graham cracker crust, instant chocolate pudding, cool whip, Marshmallow cream, and some mini chocolate chips. Throw it all together and you got yourself a tasty dessert in the shape of a S’mores Cream Pie.

My mom and I have a tradition every year where we bake a bunch of holiday cookies and desserts to give away to our family and friends. A couple years ago we tried our hand at rum balls. After following a couple different recipes we decided we needed to come up with our own version that was more to our taste. Turns out we like them nuttier than most. We also like to use a combination of half light and half dark rum.

These Boozy Rum Balls have a great boozy flavor. With additional pecans added to the recipe you get a great texture as you bite in. You’ve gotta try this recipe! You will fall in love just as we have.

My family gets together, not just for the Holiday, but also for leftovers the next day because we always have tons of food. But one thing we don’t have much of are desserts. Enter our Easy Cranberry Vanilla Pies. These pies are delicious, easy to make, and best of all you get to utilize your leftover Cranberry Sauce. 

 

To make these Easy Cranberry Vanilla Pies, we use Mini Graham Cracker Crusts, Instant Vanilla Pudding, and our Kick’n Cranberry Sauce. Throw them all together and you have yummy, adorable pies to share with the whole family.
