Our Quick and Easy Chicken Tortilla Soup

I love soup. Any soup, it doesn’t really matter. I got hooked on Chicken Tortilla Soup when Minda was pregnant with our son. She craved Mexican food her entire pregnancy and we always went to the same restaurant for lunch so she could get a chicken burrito with enchilada sauce and a side of chips. Needing to mix things up one day I tried their tortilla soup and from that point forward I was hooked. Sadly, that restaurant closed a few years later and I couldn’t get my tortilla soup fix any more. So what did we do? We made our own. After trying several recipes, we came up with a variation of our own that the whole family loves. Our Quick and Easy Chicken Tortilla Soup is the perfect mix of spice, flavor, and heartiness.

Ingredients, Substitutions, and Additions

Chicken – I love having extra chicken in our Quick and Easy Chicken Tortilla Soup so we use both chicken breast and thighs. We have boiled and slow cooked our chicken in the past to shred and use, but I like cooking it in the pot you’re going to be making the soup in. This helps bring a little extra flavor to your soup. 

Peppers – We use an abundance of peppers. Poblano, Anaheim, jalapeño, orange and red bell pepper make the mix of peppers for our Quick and Easy Chicken Tortilla Soup. 

Fresh Herbs and Veggies – Cilantro, onion, avocado, and lime are great in and on top of our Quick and Easy Chicken Tortilla Soup. 

Fire Roasted Tomatoes – Using a fire roasted tomato bring an amazing flavor to your soup. Some brands of fire roasted tomatoes will have diced green chilies for extra heat. 

Chips – Tortilla chips are a must for this soup. Our absolute favorite are Juanita’s (Juantonio’s depending on what part of the country you’re from). They are thin, perfectly crisp, and have a hint of salt.

Tip: Keep your tortilla chips on the side and add them in as you eat the soup. This will prevent them from getting soggy. 

Toppings and Crazy Additions  – You want to use what you love. Minda and I love to top our Quick and Easy Chicken Tortilla Soup with diced onion, cilantro, cheddar cheese, sliced avocado, and sour cream.  Some of the crazy additions we use are French fried onions and cottage cheese in the place of sour cream. A couple of drops of your favorite hot sauce are always welcome.

Ingredients for Quick and Easy Chicken Tortilla Soup

  • 1.5 lbs Boneless Skinless Chicken Breast
  • 1.5 lbs Boneless Skinless Chicken Thighs
  • 2 14.5 oz Cans Fire Roasted Diced Tomatoes W/Green Chilies
  • 8 Cups Chicken Broth
  • 2 tbs Oil
  • 1 tbs Tomato Paste
  • 1 Poblano Pepper
  • 1 Anaheim Pepper
  • 2 Jalapeño Peppers
  • 1/2 Orange Bell Pepper
  • 1/2 Red Bell Pepper
  • 1 large Onion

Chicken Rub

  • 1 tbs Cumin
  • 1 tsp Chili Powder
  • 1 tsp Granulated Garlic
  • 1 tsp Granulated Onion
  • 1 tsp Paprika

Soup Seasonings

  • 2 tbs Oregano
  • 1 tbs Tomato Bouillon
  • 1 tbs Cumin
  • 1 tsp Chili Powder
  • 1 tsp Granulated Garlic
  • 1 tsp Granulated Onion
  • 1 tsp Paprika

Toppings

  • 1 Bag Tortilla Chips
  • 1 Bunch Cilantro, Roughly Chopped
  • 3 Limes, Quartered
  • 1 16 oz Sour Cream
  • 2 Avocados, Sliced
  • 1/2 Onion, Diced
  • 4 oz Cheese, Shredded

Directions

Prep Veggies and Chicken: Wash and dice peppers and onion for soup into ¼ inch pieces then place into medium sized bowl. In a small bowl, combine all dry seasoning until mixed thoroughly. Evenly coat all chicken with dry seasoning.

Cook Chicken: Bring a large Dutch oven up to temperature over high heat and add oil. When the oil begins to ripple, add chicken, and cook for 10 to 12 minutes flipping halfway through. Remove from heat and let stand for 10 minutes then dice into ½ to 1-inch pieces.

Sauté Veggies and Deglaze: Reduce temperature to a medium heat. Add peppers and onion into Dutch oven and cook for 10 to 15 minutes or until softened. Mix in soup seasonings and tomato paste then stir constantly for 1 minute to prevent burning. Add in fire roasted tomatoes and stir to deglaze.

Simmer, Prep Toppings, and Enjoy: Stir in chicken and chicken broth. Bring to a boil then reduce heat and simmer for 20 minutes. Stir occasionally to prevent burning. Wash and roughly chop Cilantro. Slice avocados and quarter limes. Dice topper onion. Place cilantro, avocado, limes, onion, tortilla chips, sour cream, and cheese into bowls. Remove soup from heat. Dish and add desired topping. Serve and enjoy!
