Personalized Mini Frittatas

Our Personalized Mini Frittatas
Recently Minda started making frittatas for the family. I was able to get our son to start calling them oven omelettes. The only problem is that he would not eat our oven omelettes. Each member of our family has different ideas on what should go into our frittatas. We searched for a solution to our problem and found the answer. Personalized Mini Frittatas or what our son calls mini oven omelettes have become the solution for, “I don’t know you decide.” morning fiascos.
Ingredients, Substitutions, and Additions
Ramekin or Muffin Tins – The best way to make our Personalized Mini Frittatas are to use a ramekin or muffin tin. Either make the perfect size frittatas for one.
Eggs – No frittata is complete without eggs. This is the only item in our Personalized Mini Frittatas that every family member agrees to. I know they are essential but at least we have some common ground between each of us. Make sure to whisk your eggs really well to allow them to cover the entirety of your ham and veggies.
Seasonings – Papa and grandma like only salt and pepper. I like thyme, rosemary, onion, garlic, salt, and pepper. Minda prefers onion, garlic, salt, and pepper. The boy only wants garlic salt and pepper. The best thing is that everybody gets what they want.
Veggies – Again, you can put whatever you want in these, but this time we are going with Broccoli, Bell Pepper, Onion, and Spinach. This time we zucchini, spinach, onion, red bell pepper, diced tomatoes, shredded cheddar, feta, and ham. Use what you like.
Cheese – If you’ve been here before, you may know we love cheese. For some reason, when making breakfast foods, we always gravitate towards Feta. If you are not a fan of Feta, substitute your favorite shredded cheese.
Ham – We keep things easy and grab a package of diced ham from the store. But you can be fancy if you have some ham left over from dinner that you can dice up. Speaking of a ham dinner, try out our Ham with Citrus Bourbon Glaze. If you don’t have any ham, use some bacon or sausage.
Additions – Each family has different tastes. Use what you like. We sometimes add sour cream, cottage cheese, hot sauce, salsa, or even French-fried onions. These are all good toppers for your Personalized Mini Frittatas.
Preferred Pairings for Personalized Mini Frittatas
Dinner is a little harder to personalize but our picky eaters have approved our French Onion Pot Roast, Fried Chicken Strips, and Shredded Beef Tacos.
French Onion Pot Roast: I don’t know about you but as the months turn colder, there are certain recipes I start to crave. Pot Roast being one of them, specifically Mike’s French Onion Pot Roast.
Fried Chicken Strips: Craving some Fried Chicken Strips? We got you covered with these yummy, crispy, panko crusted, chicken tenders.
Shredded Beef Tacos: These Shredded Beef Tacos are easy to make and loaded with tons of flavor. Great for a family gathering or any weeknight dinner.
Ingredients for Personalized Mini Frittatas
- 8 Eggs
- 1/4 cup Zucchini, Chopped
- 1/2 cup Spinach, Chopped
- 1/2 medium Onion, Diced
- 1/2 Red Bell Pepper, Diced
- 1/2 cup Tomatoes, Chopped
- 2 oz Shredded Cheddar
- 2 oz Feta
- 2 tbs Ham, Diced
- 1 tbs Oil
- Non-Stick Cooking Spray
Optional Seasonings
- Salt
- Pepper
- Thyme
Directions
Preheat oven and chop veggies: Preheat oven to 350° and lightly spray ramekins. Chop Zucchini (1/4 cup) into half inch pieces. Spinach should be finely chopped (1/2 cup), and the Bell Pepper (1/2 pepper), Tomatoes (1/2 cup), and Onion (1/2 onion) should be diced into 1/4-inch pieces.
Heat ham and veggies: In a small pan, heat desired amount of ham (2 tablespoons) and/or veggies. If ham is desired cook on medium for 3 minutes. If any veggies are desired add into the pan and allow them to soften for an additional 3 minutes. Turn off heat and add spinach into the pan if desired. Stir to incorporate into the veggies. Spoon into prepared Ramekins.
Whisk eggs and pour in Ramekins: In a medium bowl, whisk 2 eggs and add preferred seasoning. Pour evenly over ham and veggies. Repeat steps for all ramekins.
Add cheese and bake: Sprinkle favorite cheese on top of the eggs and transfer ramekins to hot oven. Bake for 30-35 minutes. Remove frittatas from the oven and allow to rest for 5 minutes. Serve and enjoy!
