Grandma used to make this regularly when Minda was growing up. Then when Minda and I started dating, I was able to enjoy it several times. However, over time, it was one of those recipes Grandma stopped making and we forgot about it. After we started our family, Minda had a craving for Grandma’s beans and rice. So, we took a shot at re-making beans and rice just the way Grandma made them. The one problem was Grandma always cooked beans and rice from the heart and a recipe was never written down. After several attempts, we adapted and added to what Minda grew up with and made our very own version of beans and rice.
Ingredients, Substitutions, and Additions
Protein – Try using some ground beef or pork. Even diced chicken thighs are great in our beans and rice.
Rice – We use minute rice for a fluffier texture, however, any rice will do. Keep in mind a different rice will result in a much thicker meal.
Dry Seasonings – Add some red pepper flakes for some additional heat. Smoked paprika and Cayenne pepper can enhance the flavor of your dish.
Fresh Veggies – Add some diced carrots and celery alongside the onion when sautéing. This is a great way to sneak in some additional veggies.
Toppings – Freshly chopped green onions or parsley make a great topping. Some shredded cheese atop beans and rice is amazing. We also love hot sauce and sour cream to finish off our beans and rice.

Not Your Momma's Beans and Rice Ingredients
- 1 lbs Ground Turkey
- 3 Garlic Cloves, minced
- 1 Onion, diced
- 2 – 14.5 oz Cans Stewed Tomatoes
- 2 – 15.5 oz Cans Pinto Beans, drained
- 2 Cups Minute Rice
- 2 Cups Chicken Broth
- 1 tbs Onion Powder
- 1 tbs Garlic Powder
- 1 tbs Cumin
- 1 tbs Oregano
- 1 tbs Chili Powder
- 1 tbs Paprika
- ½ tsp Black Pepper
- ½ tsp Salt
- 2 tbs Olive Oil
Directions
Sauté onion and minced garlic: Bring a large pot to a medium heat and add olive oil (2 tablespoons). Once the oil begins to ripple add diced onion and sauté 5 minutes. Once the onions are translucent add in minced garlic (3 cloves) and sauté an additional 2 minutes. Transfer onion and garlic to a small bowl and set aside.
Cook ground turkey, add seasonings, and return sautéed onion and garlic to the pan: Increase the temperature to a medium/high heat and add ground turkey (1 pound) to the pot. Using the edge of a spatula chop up the ground turkey into small pieces and cook for 10 to 15 minutes or until browned. Add dry seasoning (1 tablespoon Onion Powder, 1 tablespoon Garlic Powder, 1 tablespoon Cumin, 1 tablespoon Oregano, 1 tablespoon Chili Powder, 1 tablespoon Paprika, 1/2 teaspoon Black Pepper, 1/2 teaspoon Salt) to browned turkey and stir in sautéed onion and garlic.
Add tomatoes, pinto beans, and chicken broth: Stir in stewed tomatoes (2 cans) and cook for 5 minutes while using the spatula to break down the tomatoes and constantly stirring to prevent burning. Add pinto beans (2 cans) and chicken broth (2 cups) and cook an additional 5 minutes.
Add rice, cook for 5 minutes, and serve: Decrease heat to low and stir in minute rice (2 cups). Cover and cook for an additional 5 minutes. Remove the lid and fluff the mixture with a spatula. Serve and enjoy.
