Our Delicious Chunky Chili

When I brought up the idea of making a different type of chili than I usually do most of the family were hesitant to my idea. Grandma was my favorite she said “NO! I’m not even going to try it.” I took this as a challenge. I wanted to make something that was meaty, chunky, and delicious and a chili that would change grandmas mind. After our Delicious Chunky Chili was done cooking I gave grandma a bowl and she said she loves it. Our Delicious Chunky Chili is a definite winner for dinner tonight.

Ingredients, Substitutions, and Additions

Beef – For our Delicious Chunky Chili we use ground beef and a chuck roast cut into 1 inch to 1 and a half inch pieces. We use chuck roast because we usually have one on hand in the freezer. If you want to go super easy get some pre-cut stew and soup meat. I have done this in the past and it taste great, but by cutting up a chuck roast you get to choose how much fat goes into your chili.

Beans – I love chili with and without beans, but always tend to make chili with beans. Canned chili beans are super easy to just throw into the pot and bring tons of flavor. When making our Delicious Chunky Chili I like to use chili seasoned pinto beans and kidney beans.

Canned Tomatoes and Sauce – Canned RoTel Tomatoes and Green Chilies are perfect for chili. They bring great flavor and a little spice to our Delicious Chunky Chili. If you need a little less spice you can use a can of diced tomatoes. Tomato sauce is the perfect base for our Delicious Chunky Chili.

Veggies and Herbs – Onion, jalapeños, and garlic are essential ingredients in our Delicious Chunky Chili. I love a good rough chop on the onion and a fine dice of the jalapeños and garlic.

Dry Seasonings – Adding dry seasoning to your chili will help intensify the flavor. We love using granulated onion and garlic, cumin, tomato bouillon, oregano, chili powder, taco seasoning, minced onion and garlic.

Awesome Additions – Minda loves eating her Delicious Chunky Chili over a bowl of white rice. We all love the traditional toppings like onions, hot sauce, cheese and sour cream, but also enjoy bacon bits and french fried onions.

Ingredients for Delicious Chunky Chili

  • 1.5 lbs Ground Beef
  • 1.5 lbs Cubed Chuck Roast
  • 1 large diced Onion
  • 2 minced Jalapeños
  • 2 tbs minced Garlic
  • 1 10 oz can Original RoTel Tomatoes and Green Chilis
  • 1 29 oz can Tomato Sauce
  • 4 15.5 oz cans Pinto Chili Beans
  • 2 15.5 oz cans Kidney Beans drained
  • 1 4 oz can Diced Green Chilis
  • 2 tbs Oil
  • 1 cup Water

Dry Seasonings

  • 1 tsp Granulated Garlic
  • 1 tsp Granulated Onion
  • 1 tsp Cumin
  • 1 tsp Tomato Bouillon
  • 1 tbs Oregano
  • 1 tbs Chili Powder
  • 1 tbs Minced Garlic
  • 1 tbs Minced Onion
  • 3 tbs Taco Seasoning

Directions

Measure dry seasonings, Delicious Chunky Chili
Saute veggies, Delicious Chunky Chili

Measure dry seasonings then cut and sauté veggies:  Measure dry seasonings (1 teaspoon Granulated Garlic, 1 teaspoon Granulated Onion, 1 teaspoon Cumin, 1 teaspoon Tomato Bouillon, 1 tablespoon Oregano, 1 tablespoon Chili Powder, 1 tablespoon Minced Garlic, 1 tablespoon Minced Onion, and 3 tablespoons Taco Seasoning) and set aside. Dice Onions (1 red onion, 1 yellow onion) and a Jalapeño then mince Garlic (4 cloves). Bring a large pot to medium heat and add 2 tbs of oil. Once the oil begins to ripple, add onions and jalapeño then sauté 4-6 minutes. When the onions are translucent, add in garlic and sauté an additional 2 minutes. Transfer onions, jalapeños, and garlic to a small bowl and set aside. 

Stir in sauteed veggies and ground beef, Delicious Chunky Chili

Brown meat: Increase heat to high and add in ground beef (1.5 pounds). Cook for 10 to 15 minutes or until browned. Transfer browned ground beef to a large bowl, add cubed chuck roast (1.5 pounds) to pot and cook 10 minutes or until browned. Stir sautéed onion, jalapeños, garlic and browned ground beef back into the pot.

Simmer and serve, Delicious Chunky Chili

Stir in dry seasonings, RoTel, sauce and bean: Stir in dry seasonings and cook for 1 minute. Add in water (1 cup) and mix to fully incorporate dry seasonings. Stir in RoTel (10 ounce can), tomato sauce (29 ounce can), diced green chilis (4 ounce can), kidney beans (two 15.5 ounce cans, drained) and pinto chili beans (four 15.5 ounce cans) and bring to a boil. Stir often to prevent burning. 

Ready to eat Delicious Chunky Chili

Simmer, serve and enjoy: Reduce heat and simmer for 30 minutes. Stir often to prevent burning. Serve Delicious Chunky Chili and top with favorite toppings then enjoy.

Ingredients

  • 1.5 lbs Ground Beef
