Our Chocolate Chip Coconut Parfait
Mike and my son always want our Fried Breakfast Potatoes, Fried Egg and bacon for breakfast but sometimes you need sweet and easy to start the day. Our Chocolate Chip Coconut Parfait is the perfect treat to satisfy your craving. We start with some crushed Vanilla Wafers and layer on some Greek Yogurt, Mini Chocolate Chips, Coconut, and Almonds. If you really want to be naughty add a drizzle of chocolate syrup like Mike does.
Ingredients, Substitutions, and Additions
Vanilla Wafers – We love Vanilla Wafers in our family. They are the perfect complement to this parfait and bring in a little crunch to the dish.
Yogurt – We found a Honey Vanilla Greek Yogurt that comes in bulk at our local wholesale store. It has great flavor and works perfectly in our parfait.
Mini Chocolate Chips – I love adding Mini Chocolate Chips to everything. I add them to my ice cream, and they are great in parfaits.
Coconut – Sweet or unsweetened coconut is a tasty addition to these parfaits.
Sliced Almonds – We wanted a little more crunch in our parfaits, so we went with some sliced almonds. Any nut will do or just add some more wafers to the top instead.
Preferred Pairings for Chocolate Chip Coconut Parfait
We typically eat our parfaits on their own, however, they are perfect when you need a little extra in the morning to fill you up. Try them with a Fried Egg, Veggie Omelet, or with a Ham and Veggie Frittata.
Fried Egg – The perfect fried egg is cooked on both sides with a velvety yolk. The trick is to flip the egg without breaking the yolk. This is our foolproof way of making the perfect fried egg, yolk intact.
Veggie Omelet – Looking for an omelet with the perfect blend of veggies? Look no further. This is one of our all-time favorite ways to make an omelet.
Ham and Veggie Frittata – Hosting Sunday brunch or just breakfast for the fam, this Ham and Veggie Frittata is sure to be a hit. Easy to make and full of flavor!
Ingredients for Chocolate Chip Coconut Parfait
- 1/2 cup Vanilla Wafers crushed (approx. 12 wafers)
- 24 oz Vanilla Yogurt
- 4 tbs Mini Chocolate Chips
- 4 tbs Sweetened Coconut
- 2 tbs Sliced Almonds
- Chocolate Syrup (optional)
- 4 whole Vanilla Wafers
Directions
Crush Vanilla Wafers and add to the bottom of each glass: Crush Vanilla Wafers and divide between 4 – 8oz glasses or bowls.
Spoon a layer of Yogurt in each glass: Spoon or pipe a layer of Yogurt (approx. 3 ounces per glass) about halfway to the top of each glass.
Sprinkle each glass with Mini Chocolate Chips and Coconut: Sprinkle a thin layer of Mini Chocolate Chips (1/2 tablespoon) and Coconut (1/2 tablespoon) to each glass.
Spoon a second layer of Yogurt in each glass: Spoon or pipe a second layer of Yogurt (approx. 3 ounces per glass) to reach the top of the glass.
Add toppings and enjoy: Top each parfait with remaining Mini Chocolate Chips (1/2 tablespoon) and Coconut (1/2 tablespoon). Sprinkle with Almond Slices (1/2 tablespoon) and drizzle with Chocolate Syrup (optional). Top each with a Vanilla Wafer. Serve and enjoy!
