Best No Bake Cheesecake

Our Best No Bake Cheesecake
Cheesecake is one of my favorite desserts, but it can take a lot of work and one wrong move can result in a crack right down the center. Well, let me introduce our Best No Bake Cheesecake. This cheesecake is easy to make and there’s no risk crackage. Top with fruit, caramel, chocolate, or maybe some chopped pecans and you won’t be disappointed.
Ingredients, Substitutions, and Additions
Cream Cheese – Like any other cheesecake, our base ingredient is cream cheese. Two blocks, or 16oz will do the trick in an 8 inch pan.
Whipped Cream – We use whipped cream to lighten up the density of the cream cheese and sweeten it up a bit. You can use store bought or homemade. Because I don’t have room in my refrigerator and whipped cream takes less than 5 minutes to make, I typically go for homemade. I’ve included my recipe below.
Sugar – A little more sweetness is needed to cut some of the cream cheese flavor…but not much.
Lemons – I love the flavor lemons bring to any cheese cake. I like to add a couple tablespoons of lemon juice into our cheesecake mixture.
Graham Cracker Crust – Graham Cracker Crust is easy to make with just some Graham Crackers, Sugar, and melted butter.
Crushing Graham Crackers – You want your Graham Crackers crushed really fine. To do this you can use a food processor but I find the results are a bit uneven. My favorite way, is to go old school…place the graham crackers in a resealable bag and run a rolling pin over them until you have the desired consistency.
Alternative – If you wanted to make this even easier, go with a storebought Graham Cracker Crust and just make the cheesecake filling.

Ingredients for Graham Cracker Crust
- 6 tbs Butter, melted
- 1/4 cup Sugar
- 180 g Graham Crackers (approx. 12 crackers), crushed
Ingredients for Homemade Whipped Cream
- 1 cup Heavy Cream
- 2 tbs Powdered Sugar
- 1 tsp Vanilla
Ingredients for Cream Cheese Filling
- 16 oz Cream Cheese
- 2/3 cup Sugar
- 1/2 Lemon, juiced (approx. 2 tbs)
- 2 cups Homemade Whipped Cream
Directions
Prepare Graham Cracker Crust and place in refrigerator to set: Combine crushed Graham Crackers and Sugar. Once fully mixed together, add in melted Butter. Transfer crust to 8″ springform pan and use a spatula or glass to press firmly into bottom of the pan. Place in refrigerator until filling is ready to add to the pan.
Make Homemade Whipped Cream and place in refrigerator: Chill bowl and whisk in freezer for 15 minutes prior to use. Add all ingredients into chilled mixing bowl and whisk on high for 2-4 minutes until soft peaks form. Refrigerate until ready to add to Cream Cheese Filling.
Mix ingredients for Cream Cheese Filling and spoon on top of Graham Cracker Crust: Add Cream Cheese, Sugar, and Lemon Juice into mixer and mix on medium until smooth. Fold in Homemade Whipped Cream. Spoon filling on top of set Graham Cracker Crust and use a spatula to level the top.
Refrigerate and serve – Refrigerate 3-4 hours (or overnight) and serve with favorite toppings. Enjoy!
