Our Baked Potatoes - Mexican Inspired

Since our first round of Baked Potatoes, Mike and I have been dying to try more options. It is a new addiction that we just can’t shake, finding new topping ideas to throw on our potato. This round is inspired by my all time favorite type of food. You guessed it, Mexican Food!

If you haven’t seen our first round of Baked Potatoes, here’s a little back story. It all started when I was a kid and all we put on our potatoes was some butter, salt, and pepper. It was ok, but not my favorite thing to eat growing up. Skip forward to when I was in my twenties, looking over a restaurant menu and discovered an entire page dedicated to different baked potato toppings. Mind blown! Now Mike and I are on a mission to find new tasty ways to dress up our potatoes.

Mike and I were convinced a Loaded Nacho Baked Potato would be AMAZING! We saved some of our ground beef from the previous nights Loaded Nachos with Fajita Veggies. Topped it with our favorite nacho toppings and a little bit of broken up tortilla chips for some crunch. This tasty number was my mom’s favorite potato. This recipe included: Seasoned Ground beef, Nacho Cheese, Onions, Tomatoes, Green Onions, Olives, Shredded Cheese, Tortilla Chips, and Sour Cream.

Feedback:

  • A little too much is happening. I would take out the nacho cheese and make it a taco potato.
  • Love this one. Just enough flavor.
  • I like the crunch from the chips on top. Needs something, maybe some hot sauce.

Our enchilada potatoes were kind of out of left field for us. We knew they would be good but didn’t think they would hold a candle to a nacho potato. This ground beef was left over from an attempt we made at our Beef Enchiladas with Red Sauce. Unfortunately, our tortillas didn’t hold together like they normally do so that recipe will have to wait a bit to be shared. Good news was the beef was flavored perfectly so why not try a Beef Enchilada Baked Potato? This recipe included: Ground Beef in Red Enchilada Sauce, Shredded Cheese, Green Onions, Onion, French Fried Onions, Olives, and Sour Cream.

Feedback:

  • With a little more onion and a drizzle of red enchilada sauce this would have been a 5.
  • Very good.
  • Would have liked more French Fried Onions for the crunch.

Since we were doing a Beef Enchilada Baked Potato it only made sense for us to try a Chicken Enchilada Baked Potato. Again, we saved a little bit of shredded Chicken from our Cheesy Chicken Enchiladas, topped it with some tomatoes, onions, and cheese. Et violà, a Chicken Enchilada Baked Potato. This recipe included: Shredded Chicken in Green Chile Enchilada Sauce, Shredded Cheese, Tomatoes, Green Onions, Olives, and Sour Cream.

Feedback:

  • Mmm! That’s a good potato. I’d eat it any day.
  • Mmm! Mmmhmm! That’s a damn good potato!
  • It needs crunch. Maybe some lettuce.

What we Learned...

  • We love enchiladas even in potato form.

  • Sometimes less is more. The Loaded Nacho Baked Potato may have gotten higher marks without the nacho cheese. 

And The Winner Is...

Although we do have a potato that technically scored higher than the other two potatoes, the scores were relatively close. There was much debate among the three of us testers as to which potato was the best. In the end we all decided it was worth it to share each of these recipes. The plan is to tweak them just a bit to take into consideration everyone’s feedback and then post them to our Kick’n Kitchen. Stay tuned!
