Our Jumbo Beef Meatballs

Minda and I grew up near an Italian Restaurant that served the BEST Meatballs. They were soft, moist, flavorful, and gigantic. Now that we no longer have access to our favorite meatballs, we have set out to create our own.

So, what makes a super moist meatball? Well, we know breadcrumbs make a more dense and hearty meatball. But, my grandma would substitute breadcrumbs for white bread soaked in milk. With this in mind, we set out to create our Jumbo Beef Meatballs.

These Jumbo Beef Meatballs are perfect complement in your spaghetti, as a side to your Italian feast, or even for your next potluck or gathering.

Ingredients, Substitutions, and Additions

Meat – We love ground beef for our Jumbo Beef Meatballs, but depending on the flavor you are going for, you can use something other than beef or a combination of ground meat. A great combo is ground beef and Italian sausage. Try and shoot for a fat content between 15 and 20 percent for a perfectly moist meatball.

Bread – This is the key to super soft and moist meatballs. We use a white or Italian bread without the crust.

Milk – We use a 2 percent milk for our meatballs because that’s what we always have on hand. Grandma taught me to use whole fat milk for a soft fall apart meatballs.

Dry Seasonings – Minda and I like to go simple with our dry seasonings. Garlic, onion, Italian seasoning, oregano, salt and pepper. Sometimes we will add extra fennel, thyme, rosemary, basil and chives.

Veggies and Herbs – Onion, garlic and basil are perfect for meatballs. Minda and I use a lot of basil in cooking and have found in our local grocery store live basil plants that stay fresh as long as you remember to water them.

Cheese – Parmesan is a must in your meatballs. It brings amazing flavor and helps bind the meatball together.

Sauce – We use a 24 oz jar of marinara but 3 cups of homemade sauce also works.

Jumbo Beef Meatballs

Ingredients for Jumbo Beef Meatballs

  • 1 lb Ground Beef
  • 1/2 Onion, Grated
  • 1 Egg
  • 2 tbs Milk
  • 1 tbs Garlic, Minced
  • 3 slices White Bread
  • 1/2 cup Parmesan, Grated
  • 1 24 oz Jar Marinara

Dry Seasonings

  • 1 tbs Dried Garlic, Minced
  • 1 tbs Dried Onion, Minced
  • 1 tbs Italian Seasoning
  • 1 tbs Oregano
  • 1/4 tsp Salt
  • 1/2 tsp Pepper

Directions

Prep and soak bread: Cut bread into 1-inch pieces. Grate onion into a medium bowl then add bread, minced garlic, milk and egg. Mix toughly. Let stand for 5 minutes.

Mix and form meatballs: Add beef, parmesan, dry seasoning and bread mixture into a large bowl and mix until all ingredients are fully combined. Form into 5 equal sized meatballs.

Cook meatballs in marinara on low for 30 minutes: Put 1/4 cup of marinara in the bottom a medium sauce pan then add meatballs. Cover meatballs with remaining marinara. Bring to a boil over medium high heat then reduce heat to low and simmer for 30 minutes or until the internal temperature of the meatball reaches 160 degrees. Continually stir to prevent burning.

Remove meatballs and serve: Remove meatballs from heat. Plate meatball and cover with sauce. Serve and enjoy.
