About Our 5 Easy Comfort Food Recipes
No matter what time of year it is, we all have those recipes we crave. Those recipes that make us feel better and we look forward to eating. For Mike and I, we have several. Here are our top five recipes that are not only comfort foods we crave, but recipes that are quick and easy to make.

Not Your Momma's Beans and Rice
This recipe is based on a recipe my momma used to make when I was a kid…but then she stopped making it. As an adult I asked how she made it and it had been so long, she couldn’t remember. So, my dad and I described it to Mike and he set out to replicate what momma used to make.
Though not exactly the same recipe as momma’s, it is pretty darn good and now one of the meals we have at least twice a month because we just can’t get enough.
Hi, We are Mike and Minda. Thank you for stopping to take a look at our Kick’n Kitchen! We are a husband and wife team that have a love for food and cooking. Come with us on our journey of rediscovering recipes from our youth and find new recipes to fall in love with.

Baked Potatoes
Sometimes you just need to have a baked potato with all the fixings. Mike and I like to come up with new toppings for our potatoes, so we don’t get bored with them. We have tried so many different topping combos. Pictured above is our Beef Enchilada Baked Potato, but we also really enjoyed our Baked Sloppy Joe Potato, our Loaded Nacho Potato, and so many more toppings from our Test Kitchen.
Quick and Easy Homemade Chili
Along with Not Your Momma’s Beans and Rice, this Quick and Easy Homemade Chili recipe is one we have on the regular. It’s so easy to make and is a great meal for when you are starving but don’t have a lot of time to mess with dinner for the family. Serve it up with some tortillas or crackers on the side and enjoy!
Cheesy Chicken Enchiladas
Cheesy Chicken Enchiladas is my personal favorite. Mike whips up the chicken two different ways depending on what we have time for. He will either throw the chicken in the Crock-Pot and then shred it or pan fry the chicken if on a time crunch. Either way these are so good served with our Quick and Easy Mexican Rice and some Homemade Pico de Gallo.
Turkey Pasta Bake
Mike and I love pasta and we always seem to have extra spaghetti sauce on hand. Made with lots of cheesy goodness and any noodles you have in your cupboard it’s sure to satisfy your tastebuds in a time crunch. We hope you enjoy this Turkey Pasta Bake as much as we do.
