This Beef Enchilada Baked Potato is a fantastic choice for when you are craving a potato with some tasty toppings and Mexican flare.

Our Beef Enchilada Baked Potato
Whenever we make enchiladas at our house we always have to make one batch of chicken and green enchilada sauce and one batch of beef and red enchilada sauce. That said, when we decided to have a Test Kitchen with enchilada baked potatoes, it just made sense for us to include our two types of enchiladas.
This Beef Enchilada Baked Potato scored a very close second place to our Chicken Enchilada Baked Potato. It consisted of a Baked Potato topped with seasoned Ground Beef with Red Enchilada Sauce, Cheddar Cheese, Onions, Green Onions, Olives, French Fried Onions, and Sour Cream.

Baked Potatoes – Mexican Inspired
Here is part 2 of our Test Kitchen Baked Potatoes this time with some Mexican flare. Check out our Baked Potatoes – Mexican Inspired.
Ingredients, Substitutions, and Additions
Protein – We used Ground Beef for this recipe, however, you could just as easily substitute ground turkey or chicken for this tasty potato.
Cheese – The best shredded cheese is shredded at home. But we have been known to use store bought packaged shredded cheese. Whatever is easier for your family.
Veggies – We added Green Onions, Olives, and Onions to the top of these potatoes. This was the perfect combination for us.
French Fried Onions – Ok, honestly, we love French Fried Onions and may use them too much in our cooking. But they brought a little of the crunchy texture that we love in a potato.
Baked Potatoes on the BBQ
We always cook our potatoes on the BBQ, especially during the warm months to keep our house as cool as possible.
1. First we preheat the grill to 400-450 degrees.
2. Wash the potatoes to get any dirt off.
3. Grab two pieces of foil about 12-14 inches long depending on how big your potatoes are.
4. Spray the center of one foil sheet with non-stick cooking spray.
5. Set down your potato and spray the top of your potato with non-stick cooking spray.
6. Season the top of the potato with salt, pepper, garlic powder, and onion powder. Flip the potato and season the other side.
7. Fold the foil so it is tightly secured around the potato.
8. Take the second sheet of foil and fold it around the potato to ensure the potato is completely covered and protected from the flame.
9. Place the foiled potatoes on the BBQ and close the lid. BBQ the potatoes for 60 minutes, flipping them in 20 minute intervals to ensure they do not burn. Remove from BBQ and serve with desired toppings.
*Non-Stick Cooking Spray – I know it sounds weird, however, it helps prevent the potato from burning in the foil. We tried spreading a bit of Olive Oil on the potato before and it was a BAD idea. DO NOT USE OIL. It leaks through the foil and causes the BBQ to flame and smoke.*
Ingredients for Beef Enchilada Baked Potato
Ground Beef with Red Enchilada Sauce
- 1 lb Ground Beef
- 1 can Red Enchilada Sauce
- 2 tbs Oil
- 1 tbs Cumin
- 1 tbs Garlic Powder
- 1 tbs Onion Powder
Beef Enchilada Baked Potatoes
- 8 oz Shredded Cheddar Cheese
- 2.25 oz can Sliced Olives
- 1 Small Red Onion
- 1/4 cup Green Onion, chopped
- 3/4 cup French Fried Onions
- 1 cup Sour Cream
- 4 Large Baked Potatoes
Directions
Ground Beef with Red Enchilada Sauce
Bring a large pan to medium/high heat and add 2tbs of oil. Once the oil begins to ripple add ground beef and dry seasonings. Cook for 10-15 minutes or until browned. While the beef is browning, be sure to chop up the meat to desired size with spatula. When beef has browned, reduce heat to low and add 1/3 of the can of Red Enchilada Sauce. Simmer for 5 minutes, turn off the heat and set aside.
Beef Enchilada Baked Potatoes
Bake the four potatoes your favorite way, BBQ, microwave, or oven.
Slice each baked potato in half lengthwise. Use a fork to mash the insides and flatten the potatoes.
Spoon about a half a cup of Ground Beef on each potato and top with desired amount of Shredded Cheese, Green Onions, Red Onions, Olives, French Fried Onions, and Sour Cream. Optional: Drizzle some of the remaining Red Enchilada Sauce onto the potatoes for some extra flavor. Serve and Enjoy!
