Our Quick and Easy Mexican Rice
One of Minda’s absolute favorite types of food is Mexican. She could eat Mexican food all day, everyday, and it seems as though she has passed that trait on to our son. That said, it was very important for us to be able to make some key recipes at home.
Mexican Rice is one of our families favorite sides. Before we moved, you could find it anywhere and it was so good! Now, with us living so far away from town, we are left to our own devices. We have tried so many different variations in rice, seasoning, and spice only to have it be good, but not perfect.
Until now, this Mexican Rice is AMAZING! From flavor, to texture, to time this rice is perfect.
Ingredients, Substitutions, and Additions
Minute Rice – One of the things we look for in our Mexican Rice is a fluffy texture. We have tried different kinds of long grain rice and short grain rice but nothing gives us the fluffy texture like Minute Rice does. Plus we have the added benefit of the rice taking only five minutes to finish cooking.
Onion – We use a yellow onion to give the rice a little bit of crunch and flavor. You could also add some diced carrots or corn depending on what your preferences are.
Tomato Paste – The best invention has to be Tomato Paste in a tube. You can use what you need and save the rest for later. However, it can cost a bit more than the canned Tomato Paste. If using the canned Tomato Paste you can save what you don’t use by freezing it in ice cube trays.
Tomato Bullion – Honestly, we didn’t know this existed until a few years ago. It’s the perfect addition to this rice and you can find it in any grocery store.
Preferred Pairings for Quick and Easy Mexican Rice
Our Quick and Easy Mexican Rice is perfect alongside our Crock Pot Chili Verde Tacos or some super easy tostadas. Don’t forget to add some Homemade Pico de Gallo to your meal.

Quick and Easy Mexican Rice Ingredients
- 2 tbs Olive Oil
- 1 Small Onion, minced
- 1 tbs Garlic, minced
- 1 tbs Tomato Paste
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1/2 tsp Cumin
- 1/2 tsp Oregano
- 1 tsp Tomato Bullion
- 1/2 Lime, juiced
- 1 1/2 cups Minute Rice
- 1 1/2 cups Water
Directions
Bring medium size pan up to medium/high heat and add Olive Oil. Sauté Onion for 4 minutes or until translucent. Stir in minced Garlic and sauté an additional 2 minutes.
Add Tomato Paste and dry seasonings and stir until fully combined. Pour in water and lime juice into the pan and bring to a boil.
Add Minute Rice to the pan, stir to incorporate and turn off the heat. Allow to sit for 5 minutes.
Fluff rice with a fork. Serve and enjoy!
