Our Parmesan Broccoli and Asparagus

When we were a young family, just starting off our life together, we didn’t always make sides to go with our dinners. Let alone a side of veggies. Growing up vegetables were steamed…or microwaved from a can. Not really something I looked forward to eating as a young adult.

Broccoli and asparagus were two vegetables we liked and would actually eat. Often we incorporated them into rice bowls with a little bit of cheese sprinkled on top. Mike and I would take these for our lunch and counted this as our vegetable for the day.

One day we decided we needed to break down and just start including veggies with our dinner. We started with our two favorites, broccoli and asparagus. By combining both broccoli and asparagus together, frying them up in a pan with some seasonings and parmesan cheese we went from not eating vegetables with our dinners to buying broccoli and asparagus in bulk. This recipe really was what opened our minds to the idea that vegetables could be something wonderful to include in your meals.

Ingredients, Substitutions, and Additions

Broccoli Florets:
Frozen: If using frozen broccoli, thaw first by adding it to the pan before anything else. Once the broccoli is thawed, add the Olive Oil and proceed with the recipe.
Bunch: If using a bunch of fresh broccoli, include the stems. Dice the stem up in to 1/2 inch pieces and add them to the pan with Broccoli and Asparagus.

Seasonings: The seasonings on this dish can be really versatile. Any Garlic and Herb combo or spice blend would work.

Meal Prep: Broccoli and asparagus are the perfect veggies to prep and freeze for cooking later. All you need to do is rinse your veggies, chop them, throw them into a freezer safe resealable bag, and toss it into the freezer. When you are ready to use them you can steam them in the microwave or put them directly into your hot pan. Once the veggies are thawed and turn a brighter shade of green, add the Olive Oil and proceed with the recipe.

Parm Broccoli and Asparagus

Parmesan Broccoli and Asparagus Ingredients

  • 2 cups Broccoli Florets
  • 1 cup Asparagus Spears, cut 1-2 inch pieces
  • 2 tbs Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 cup Grated Parmesan Cheese
  • Salt & Pepper

Directions

Heat a large pan to medium/high heat and add Olive Oil. Add Broccoli and Asparagus to the pan, cover and fry for 5-10 minutes or until vegetables are tender. Stir occasionally.

Sprinkle Onion and Garlic Powder onto the vegetables and stir. Add Grated Parmesan Cheese, stir to incorporate and allow to fry 1-2 minutes until the cheese starts to crisp up a little. Serve and Enjoy!
