Onion and Bell Pepper Buttery Rice

Our Onion and Bell Pepper Buttery Rice

Our family loves rice. Whether it’s included in the main dish or served on the side we are fans. I love getting in the kitchen and experimenting with different flavors to complement our dinner. One of our favorite dishes that come from my experimentation is our Onion and Bell Pepper Buttery Rice. This is a simple side made with sautéed onions, bell pepper, butter, jasmine rice, and some seasonings. Give it a try next time you need a side to serve with dinner.

Ingredients, Substitutions, and Additions

Rice – We use jasmine rice when we have our Onion and Bell Pepper Buttery Rice. Any long grain rice will do. Jasmine rice holds up perfectly during the cooking process.

Veggies – Minda and I have used red, green, yellow, and orange bell peppers. We prefer red because they are sweeter than green bell pepper. We also use yellow or red onions. Both taste great. I might be crazy, but I love the look of the red peppers as they cook.

Dry Seasonings – We do go a little basic here but add what you like. Add some cumin, chili powder, thyme, or fennel seed. We use chicken bouillon, but you can use beef or tomato.

Butter – You can’t have buttery rice without butter. We use unsalted butter but have used salted butter. Just remember to adjust any extra salt added.

Ingredients for Onion and Bell Pepper Buttery Rice

  • 1.5 cups Jasmine Rice
  • 1/2 Red Bell Pepper
  • 1/2 Red Onion
  • 2 tbs Olive Oil
  • 2 tbs Unsalted Butter 
  • 2 and 3/4 cups Warm Water 

Dry Seasonings

  •  1 tbs Chicken Bouillon
  • 1 tbs Granulated Onion
  • 1 tbs Granulated Garlic 
  • 1 tsp Paprika 
  • 1 tsp Dried Minced Garlic 

Directions

Measure ingredients for Onion and Bell Pepper Buttery Rice

Prep Seasonings and Veggies then Measure Rice and Water: Wash and dry red bell pepper (1/2 red bell pepper) the cut along with red onion (1/2 red onion) into 1/4-inch pieces. Mix dry seasonings (1 tablespoon chicken bouillon, 1 tablespoon granulated onion, 1 tablespoon granulated garlic, 1 teaspoon paprika, 1 teaspoon dried minced garlic) and place into a small bowl. Measure rice (1.5 cups) and rinse under cold water then place into a bowl. Heat water (2 and 3/4 cups) and set aside.

Sauté Veggies and Toast Rice: Bring a pan up to temperature over medium high heat. Add in butter and oil. When the butter is melted stir in red bell pepper and red onion then sauté for 7 minutes. Add in rice and toast for 4 to 5 minutes. Stir occasionally to prevent burning.

Add Dry Seasonings and Water, Cook then Serve: Add in dry seasonings and water and stir. Bring to a boil then reduce heat and cover. Simmer for 20 minutes then remove lid and fluff rice. Replace lid and let stand for 5 minutes. Serve desired amount and enjoy!
