Baked Potatoes. What’s there to say. They’re the perfect vessel for delicious meals. Minda and I love our potato creations. With the help of Baked Potatoes, we have created some amazing recipes. If you are looking for inspiration, look at our Test Kitchen – Baked Potatoes. We had recently made our Loaded Nachos with Fajita Veggies and I thought that this would be great on a Baked Potato. This idea brought around the second try of the Test Kitchen, Baked Potatoes – Mexican Inspired.

Nachos are one of my favorite late-night snacks. What’s not to love about melted cheese, meat, and veggies piled high on a bed of crunchy tortilla chips. One idea I recently had was to put everything I love about nachos on a delicious baked potato. Even our son was excited about the idea of what he called “Nacho Potato”. Minda and I were super excited about the idea and created our Loaded Nacho Baked Potato.

Ingredients, Substitutions, and Additions

Nacho Meat – When testing this potato, we had some left over Nacho Meat from our Loaded Nachos With Fajita Veggies.

Cheeses – This potato is topped with both nacho cheese and shredded cheddar cheese for extra yumminess.

Veggies – We added lots of Tomatoes, Yellow Onion, Green Onion, and Olives on top of our Loaded Nacho Baked Potato.

Tortilla Chips – From past Baked Potato Testing we knew we needed to add some texture to the potato. Well it would be a Nacho Baked Potato without some Tortilla Chips on top so we crumbled up a couple and it was just the right addition.

Baked Potato on the BBQ

We always cook our potatoes on the BBQ, especially during the warm months to keep our house as cool as possible. 

1. First we preheat the grill to 400-450 degrees.
2. Wash the potatoes to get any dirt off. 
3. Grab two pieces of foil about 12-14 inches long depending on how big your potatoes are. 
4. Spray the center of one foil sheet with non-stick cooking spray. 
5. Set down your potato and spray the top of your potato with non-stick cooking spray. 
6. Season the top of the potato with salt, pepper, garlic powder, and onion powder. Flip the potato and season the other side. 
7. Fold the foil so it is tightly secured around the potato. 
8. Take the second sheet of foil and fold it around the potato to ensure the potato is completely covered and protected from the flame.
9. Place the foiled potatoes on the BBQ and close the lid. BBQ the potatoes for 60 minutes, flipping them in 20 minute intervals to ensure they do not burn. Remove from BBQ and serve with desired toppings. 


*Non-Stick Cooking Spray – I know it sounds weird, however, it helps prevent the potato from burning in the foil. We tried spreading a bit of Olive Oil on the potato before and it was a BAD idea. DO NOT USE OIL. It leaks through the foil and causes the BBQ to flame and smoke.*

Nacho Meat

  • 1 lb Ground Beef
  • 2 tbs Oil
  • 1 Medium Onion, diced

Loaded Nacho Baked Potato

  • 4 Baked Potatoes
  • 15.5 oz Tostitos Salsa con Queso, warmed
  • 8 oz Shredded Cheddar Cheese
  • 1 Roma Tomato, diced
  • 1 Yellow Onion, diced
  • 1/4 cup Green Onion, chopped
  • 1 small Can Sliced Olives
  • 1 cup Sour Cream
  • Tortilla Chips

Directions

Cook Nacho Meat

Loaded Nacho Baked Potato

Bake the four potatoes your favorite way, BBQ, microwave, or oven.

Slice each baked potato in half lengthwise. Use a fork to mash the insides and flatten the potatoes.

Spoon about a half a cup of Nacho Meat on each potato and top with desired amount of Nacho Cheese, Shredded Cheese, Green Onions, Yellow Onions, Olives, Tortilla Chips, and Sour Cream. Serve and Enjoy!
