Our Extra Garlicy Garlic Bread
Minda and I love bread. Garlic makes bread even better. At our home there are different levels to the garlic bread we have with meals or snacks. If we are going basic we sprinkle a little granulated garlic on top of sliced bread. When we go with what I call “fancy” we roast several heads of garlic and add minced garlic along with margarine and parmesan to make a garlicy garlic spread. Even our son loves it when we have our fancy garlic bread and believes every night is a good night for our Extra Garlicy Garlic Bread.
Ingredients, Substitutions, and Additions
Garlic – I love garlic. I would add it to any meal if I could. For our Extra Garlicy Garlic Bread we make roasted garlic then add additional minced garlic. If you love garlic this is for you.
Cheese – We add grated parmesan into our spread. It brings the perfect amount of saltiness and flavor. Sometimes when cooking is almost complete, we sprinkle some shredded cheddar for extra cheese. I love smoked gouda in place of cheddar. Use any cheese you like.
Margarine – I personally love how easy margarine is to spread and that’s why we use it. I always forget to take the butter out of the fridge to soften, but it is just as good.
Bread – Minda loves a sourdough loaf while I love a French loaf. When we have our Extra Garlicy Garlic Bread we pick up a loaf from the grocery store and grab what looks best for the day. Minda and I slice our loaf in half, so it is easier to work with. Depending on how we want our bread we will slice it length wise or into individual pieces.
Dry Seasonings – We only use kosher salt when we roast our garlic but have added thyme, rosemary, sage, and fennel seed to give extra flavor. If you want extra garlic or seasoning add some granulated garlic, granulated onion, or red pepper flakes into your garlic spread.

Ingredients for Extra Garlicy Garlic Bread
- 3 cloves Garlic, Minced
- 1/4 cup Grated Parmesan
- 1/2 cup Margarine
- 1 Loaf Bread
- Aluminum Foil
- 4 oz Shredded Cheddar (Optional)
Roasted Garlic
- 3 Heads Garlic
- 3 tbs Olive Oil
- 1/2 tsp kosher salt
- Aluminum Foil
Directions
Prep Heads of Garlic and Preheat oven: Preheat oven to 400°. Measure out olive oil (3 tablespoons) and Kosher salt (1/2 teaspoon) Cut tops off the heads of garlic (3 Heads of Garlic) and sit on a sheet of aluminum foil. Fold aluminum foil around edges of garlic heads.
Season Heads of Garlic and Roast: Drizzle olive oil over heads of garlic, 1 tablespoon per head. Evenly sprinkle Kosher salt over garlic. Fold aluminum foil over heads of garlic and place on baking sheet. Place in oven and roast for 60 minutes.
Remove Roasted Garlic from Oven and Prep Garlic Spread: Remove roasted garlic from oven and let stand for 10 minutes. Mince garlic (3 cloves). Measure grated parmesan (1/4 cup) and margarine (1/2 cup). In a medium bowl squeeze in roasted garlic and mash with a fork. Stir in minced garlic, grated parmesan, and margarine and stir until fully combined.
Cut loaf, top with garlic spread and bake: Turn oven down to 350°. Slice bread in half lengthwise and cut halves in half to make 4 equal pieces. Evenly top each piece of bread with garlic spread. Wrap in aluminum foil and bake for 30 minutes. Remove from oven and aluminum foil and place onto a cookie sheet.
Broil: Increase heat to low broil. (Optional) Top half the bread with shredded cheddar (4 oz). Return to oven and broil for 4 to 5 minutes or until bread is toasted and cheese is melted.
Remove from oven, let stand, cut, and serve: Remove from oven. Let stand for 5 minutes. Cut into desired sized pieces. Plate, serve, and enjoy.
