Our Sinful Grilled Cheese on Sourdough

Our son loves a grilled cheese sandwich. He also loves himself a cheese skirt. One day he was being extra awesome, and we thought we would treat him by making his grilled cheese with a cheese skirt crust. Well, it turns out this was a mistake. Now every time he has a grilled cheese he has to have the cheese skirt crust. Not that we blame him. This tasty, cheesy sandwich of awesomeness is one of our favorites too. And so, our Sinful Grilled Cheese on Sourdough was born.

Ingredients, Substitutions, and Additions

Bread – We absolutely love sourdough bread in our family. But we encourage you to go rogue and use your favorite bread. Wheat, Rye, White, they all work with this recipe.

Cheese – There is no getting round it a grilled cheese sandwich without cheese. It’s the key ingredient. In this recipe, we like to use a combination of sliced and shredded cheese on the inside of the sandwich to hold everything together and shredded cheese for the cheese skirt crust. We stick with cheddar cheese, because it’s what we always have in our refrigerator, however, go with what you like. Mozzarella, Gouda, Havarti, Pepper Jack, or maybe a combination of cheeses. You pick.

Note: Cheese amounts are based on the size of our bread. The sourdough we love at our grocery store is particularly large and therefore earns quite a bit of cheese. Tailor the measurements to the size of your bread as well as your preferences.

Butter – Butter is the glue that holds the cheese to the bread to create our cheese skirt. Every now and then we will use mayo instead of butter.

Ingredients for Sinful Grilled Cheese on Sourdough

  • 2 Slices Sourdough Bread
  • 2 Slices Medium Cheddar
  • 3 oz Shredded Cheddar
  • 2 tbs Butter

Directions

Butter one side bread slices for Sinful Grilled Cheese
Spread cheese on buttered side of bread for Sinful Grilled Cheese

Butter and Top Shredded Cheddar Cheese on Bread: Spread Butter (1 tablespoon) on each slice of sourdough bread. Sprinkle 1 oz of shredded cheddar on top of both slices of buttered bread and pat lightly to help it stick.

Place one slice of bread in hot pan and layer cheese on top for Sinful Grilled Cheese

Bring pan up to temperature then layer bread and cheese: Bring pan up to temperature over medium heat. Place one slice of sourdough bread cheese side down into hot pan. Add 2 slices medium cheddar and remaining shredded cheddar (1 ounce). Top with the second slice of sourdough bread cheese side up.

Flip to toast the other side of the sandwich
Ready to eat Sinful Grilled Cheese

Grill, Flip and Enjoy: Place lid on pan and grill for 4 to 5 minutes or until cheese is toasted. Flip and repeat. Remove from pan. Slice in half and enjoy!
