Our Chewy Cocoa Cookies
I don’t know about you but in the cold months, one of my favorite drinks to keep me warm is a cup of hot cocoa. I go through these baking spurts where I just get the itch to bake something and I really wanted to make a chocolate cookie. With no cocoa powder on hand, I had to get creative and I thought why not turn my favorite drink into a cookie. And thus began my journey to create the perfect Chewy Cocoa Cookies.
It wasn’t the easy task I thought it would be. Surprisingly, adding the hot cocoa powder into my cookie dough wasn’t enough to give it the chocolaty flavor that is essential to a cocoa cookie. To fix this I shredded a couple squares of a dark chocolate bar I had on hand. This really upped the richness of the cookie!
Next problem was marshmallows. I can’t drink hot cocoa without marshmallows so my cookie had to have them. I tried so many different ways to incorporate these dang things I thought I would go mad. I finally settled on drizzling some marshmallow cream on top of the cookies.
Ingredients, Substitutions, and Additions
Butter – Ok, if you’ve been here before, you know I am horrible at waiting for my butter to soften up. I usually boil some water in my tea kettle and throw a cup of the hot water into my microwave with some chopped up butter to sit for about 5 minutes. This always does the trick for me and gets my butter to the perfect temperature.
I was bad this last time and didn’t do my normal trick to soften my butter. Big mistake! My butter was too cold, which really made for a thick, cold, and firm cookie dough. Not what I wanted, so on a whim I decided to add some Vegetable oil to the dough to soften it up. To my surprise it worked!
So, if you make the same mistake I did, try adding some Vegetable Oil to your dough one tablespoon at a time until you have the consistency you want.
Hot Cocoa Powder – Because of my love of Hot Cocoa, I can’t just buy the packets of Hot Cocoa. I just blow through those in no time at all. I buy the big tub of Hot Cocoa and it lasts forever! I haven’t quite gotten to the point where I have made my own Hot Cocoa Powder, one day I will.
Dark Chocolate – As I mentioned above, I needed something extra to give our cookies more of a chocolaty flavor. I ended up adding 4 squares of Lindt Dark Chocolate, 95% Cocoa. I’ve tried this with 85% Cocoa as well and it was just as tasty. So use whatever you like, but I definitely recommend adding this to your dough.
Marshmallow Cream – Before trying marshmallow Cream I tried adding marshmallows right to the dough. The problem I had was, they would bake into the cookie and completely disappear.
I then tried to scoop the Marshmallow Cream with the cookie dough. Now, this toasted the marshmallow a bit as it baked and gave it an awesome texture. However, they absolutely looked horrible and unappetizing.
I finally settled on a Marshmallow Cream drizzle. To get it to drizzle the way I wanted, I melted it in a sauce pan with a bit of milk. It worked great and I was able to just use a spatula to drizzle it on my cooled cookies.

Ingredients for Chewy Cocoa Cookies
Cocoa Cookie
- 3/4 cup Butter, unsalted (softened)
- 1/2 cup Sugar
- 2 Eggs
- 1 tsp Baking Soda
- 1 1/2 cups Hot Cocoa Powder
- 2 cups Flour
- 1 1/3 cups Semi-Sweet Chocolate Chips
- 1 oz Lindt 95% Cocoa Dark Chocolate, grated
Marshmallow Drizzle
- 7 oz Marshmallow Cream
- 1 1/2 tbs Milk
Directions
Preheat oven: Preheat oven to 350°.
Mix dry ingredients: In a medium bowl, whisk together Flour, Baking Soda, and Hot Cocoa Powder. Set bowl aside.
Mix wet ingredients: In a mixing bowl, cream together, Butter and Sugar on medium speed. Once a creamy texture has been reached, add Eggs.
Combine wet and dry ingredients: Slowly spoon in Flour mixture into the Butter while mixer is on low speed. Scrape sides of the bowl as needed to ensure everything is fully combined.
Add Chocolate Chips and Grated Chocolate: Still on low speed, add Semi-Sweet Chocolate Chips and Grated Chocolate into the mixing bowl.
Scoop dough onto cookie sheet and bake: Spoon cookie dough into 1 inch balls and place on non-stick cookie sheet 2 inches apart. Bake for 8 minutes. Remove from oven, transfer to a cooling rack, and allow to cool completely.
Melt Marshmallow Cream: In a small sauce pan add Marshmallow Cream and Milk. Heat on low while constantly stirring to prevent cream from burning. When Marshmallow Cream is fully melted and smooth remove from heat.
Drizzle Marshmallow Cream on Cookies and Serve: Drizzle Marshmallow Cream on completely cooled Cookies. Allow cookies to sit for about 15 minutes so the marshmallow cream can cool and firm up. Serve and enjoy!
